MAMAW'S CHICKEN AND RICE CASSEROLE

Mamaw's Chicken and Rice Casserole image

I grew up on this recipe, my Grandmother got it from a lady from church at a pot luck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)

Tips:

  • Use day-old rice for a better texture. Freshly cooked rice will be too moist and make the casserole mushy.
  • Don't be afraid to use a variety of vegetables. You can add any type of vegetables that you like, such as broccoli, cauliflower, carrots, or celery.
  • Use a good quality chicken broth. The broth will add a lot of flavor to the casserole, so it's important to use a good quality one.
  • Cook the casserole until the rice is heated through and the chicken is cooked through. This will usually take about 30 minutes.
  • Serve the casserole immediately with your favorite sides.

Conclusion:

Chicken rice casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It's also a great way to use up leftover chicken. With a few simple ingredients and a little bit of time, you can have a tasty and satisfying meal that the whole family will enjoy.
