GRANDMA'S CHRISTMAS COOKIE

Grandma's Christmas Cookie image

My Grandmother used to make these for my mother and me for years. We took it for granted that she would always be here to do so. My mother and I played with the ingredients until we think we have duplicated Grandma's recipe. The light coating of powdered sugar makes these stand out from the other cookies in the tin.

Number Of Ingredients 11

4 ½ cups sifted all-purpose flour
1 teaspoon baking soda
2 teaspoons cream of tartar
½ teaspoon salt
1 cup margarine, softened
1 cup butter, softened
1 ½ cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups ground pecans
1 cup confectioners' sugar, or more as needed

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Stir the sifted flour, baking soda, cream of tartar, and salt together in a bowl.
  • Beat the margarine, butter and sugar together with an electric mixer in a large bowl until smooth. Mix the flour mixture into the butter mixture until just incorporated. Gently mix the pecans into the dough with your hands.

Tips:

  • Chilling the dough: Chilling the dough for at least 30 minutes before rolling and baking helps prevent the cookies from spreading too much and keeps their shape.
  • Using parchment paper: Line your baking sheets with parchment paper to prevent the cookies from sticking. This also makes cleanup easier.
  • Rolling the dough evenly: Roll the dough to an even thickness to ensure that the cookies bake evenly.
  • Cutting the cookies: Use a sharp cookie cutter to cut the dough. This will help prevent the cookies from becoming misshapen.
  • Baking the cookies: Bake the cookies until the edges are just starting to brown. Overbaking will make the cookies dry and crumbly.
  • Cooling the cookies: Let the cookies cool completely on the baking sheets before transferring them to a wire rack. This will help prevent the cookies from breaking.

Conclusion:

Grandma's Christmas butter cookies are a delicious and festive treat that are perfect for any holiday gathering. With their simple ingredients and easy-to-follow instructions, these cookies are a great choice for bakers of all skill levels.
