1 cup warm water
3/4 tablespoon active dry yeast
1/4 cup honey
1/2 tablespoon vegetable or canola oil
1/2 teaspoon cinnamon
1/2 tablespoon salt
3/4 cups wheat flour
1 1/2 cups unbleached all-purpose flour
3/4 cup granola (or about 3 Nature Valley™ granola bars, crumbled)
1 handful raisins

Steps:

  • In the bowl of a stand mixer using whisk attachment, mix yeast with the water until yeast is dissolved. Replace whisk attachment with paddle attachment and add in honey, oil and cinnamon.
  • Replace paddle attachment with dough hook. Add flours, granola and raisins and mix until flour is fully incorporated and dough begins to pull from the sides. No kneading is necessary. Pour dough in a lightly-greased large bowl, cover and let rise about 2 hours or until doubled in size.
  • Cover bowl with risen dough lightly with plastic wrap and refrigerate overnight.
  • Take refrigerated dough and shape into an oval using your hands. Place oval-shaped dough in a lightly-greased 8 x 5-inch loaf pan. Cover and let rise about 2 hours or until doubled in size.
  • Preheat oven to 375°F. Once dough has risen, bake on middle rack about 30-40 minutes or until golden brown on top. Allow to cool completely on wire rack before slicing.

1 cup granola without raisins
2 packages (1/4 ounce each) active dry yeast
2 teaspoons salt
1-1/2 cups water
1 cup plain yogurt
1/2 cup honey
1/4 cup vegetable oil
2 eggs
2 cups whole wheat flour

Steps:

  • In a large bowl, combine 3 cups all-purpose flour, granola, yeast and salt; blend well. In a medium saucepan, combine water, yogurt, honey and oil; heat to 120° to 130°. Add to flour mixture along with eggs; mix on low speed. Stir in whole wheat flour and 1 cup all-purpose flour to form a soft dough. Turn onto a floured surface; knead about 8-10 minutes, adding enough remaining all-purpose flour until dough is smooth and elastic. Place in a greased bowl, turning once to grease top.
