Time 1h

Number Of Ingredients 10

2 medium celery roots (about 2 1/4 pounds)
1 cup beef broth, preferably homemade
1 cup milk
1 cup water
1 teaspoon dried summer savory
About 1 teaspoon coarse salt
2 tablespoons unsalted butter
2 tablespoons flour
1/2 teaspoon freshly grated nutmeg
2/3 cup finely shredded Parmesan

Steps:

  • Trim and peel celery root. Cut in three-fourth-inch cubes, placing them in a bowl of water as you proceed.
  • Combine in saucepan with broth, milk, water, savory and one teaspoon salt; liquid should not quite cover. Gently simmer, covered, until barely tender -- about 10 minutes.
  • With a slotted spoon transfer cubes to buttered shallow baking dish of one-and-a-half quart capacity. Strain and reserve liquid. Heat butter in rinsed-out saucepan. Add flour; stir on low heat until golden. Add one-and-a-half cups cooking liquid. Whisk over moderate heat until liquid boils.
  • Sprinkle nutmeg on celery root. Season sauce with salt and pepper to taste; pour over cubes. Sprinkle cheese to cover evenly. Bake in center of preheated 350-degree oven for about 35 minutes, until lightly browned and bubbly.

Provided by Martha Stewart

Categories     Food & Cooking     Main Dish Recipes     Casserole Recipes

Number Of Ingredients 9

4 shallots, sliced thin
3 medium bulbs celeriac
2 sprigs fresh thyme
1 cup heavy cream
1 tablespoon Dijon mustard
Freshly grated nutmeg
Salt and freshly ground black pepper
3/4 cup freshly grated Gruyere cheese
1/4 cup freshly grated Parmesan cheese

Steps:

  • Heat oven to 400 degrees. Butter a 1 1/2-quart gratin dish. Scatter shallots over bottom of dish. Trim celeriac by cutting off bottom and top, then cutting off thick outer layer with a sharp knife. Cut into 1/4-inch slices and then julienne. Arrange evenly in gratin dish. Sprinkle thyme leaves over celeriac.
  • In a small bowl, whisk together cream, mustard, nutmeg, and salt and pepper. Pour over celeriac and sprinkle with cheeses. Cover with foil and bake for 20 minutes.
  • Remove foil and continue baking until top is brown and bubbly and cream is thickened and reduced, about 20 more minutes. Let cool for 10 minutes and serve.

Tips:

  • To enhance the flavor of your celery root gratin, roast the celery root before baking it. This will caramelize the natural sugars and add a delicious depth of flavor.
  • If you don't have heavy cream, you can substitute milk or half-and-half. However, the gratin will be less rich and creamy.
  • Feel free to add other vegetables to your gratin, such as potatoes, carrots, or parsnips.
  • To make a vegetarian gratin, omit the bacon or pancetta.
  • Serve the gratin immediately after baking, while it is still hot and bubbly.

Conclusion:

Celery root gratin is a delicious and versatile dish that can be served as a side dish or main course. It is easy to make and can be tailored to your own taste preferences. Whether you like it classic or with a few extra ingredients, celery root gratin is sure to please everyone at the table.
