1 garlic head
1 teaspoon olive oil
1 (8 ounce) package cream cheese, softened (i use FF)
2 ounces goat cheese
1/4 cup freshly grated parmesan cheese
salt & freshly ground black pepper
2 -3 tablespoons milk
chopped fresh chives or parsley (to garnish)

Steps:

  • Slice the top off the garlic bulb to reveal the cloves.
  • Drizzle with olive oil and wrap in aluminum foil.
  • Bake in a 400F (200C) oven for 45 minutes.
  • Cool and remove garlic cloves from their skins by gently squeezing.
  • Mash the garlic with a fork and combine with the remaining ingredients, mixing well and adding enough milk to achieve a spreadable consistency.
  • Spoon into a serving bowl and sprinkle with chopped herbs.
  • Serve with raw vegetables, crackers, or pita bread.

1/2 teaspoon fresh rosemary, minced

Steps:

  • Cut garlic crosswise in half and spread some oil on cut surface, wrap in foil.
  • Roast in 375°F oven about 45-50 minutes.
  • Till soft and golden.
  • Squeeze the meat out of the skins season with salt and pepper add enough oil to taste while using a fork to smash till smooth and creamy. Mix in rosemary.

4 cloves garlic, finely chopped
1 large soft Italian or French loaf
1/4 cup grated Parmesan
Kosher salt

  • Arrange a rack in the center of oven and preheat to 450 degrees F.

4 ounces Gorgonzola cheese
½ cup heavy cream
¾ teaspoon salt
4 leaves fresh sage
1 18-inch square cheesecloth
⅓ cup walnuts, chopped

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Chop 1/2 inch off of the top of the garlic head, just enough to expose the cloves. Drizzle with olive oil and wrap in aluminum foil.
  • Roast in the preheated oven until golden brown, 30 to 40 minutes. Let cool enough to handle, about 5 minutes.
  • Measure out 2 tablespoons of roasted garlic and press with the side of a knife to smooth each clove into a paste.

3 tablespoons lemon juice
