1-1/2 teaspoons garlic powder
1-1/2 teaspoons dried oregano
1-1/2 teaspoons dried basil
1/2 teaspoon salt
1/8 teaspoon pepper
2 beef ribeye steaks (1-1/2 inches thick)
1 tablespoon olive oil
1 tablespoon lemon juice
2 tablespoons crumbled feta cheese
1 tablespoon sliced ripe olives

Steps:

  • In a small bowl, combine the first five ingredients; rub onto both sides of steaks. In a large skillet, cook steaks in oil for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare a thermometer should read 135°; medium, 140°; medium-well, 145°). Sprinkle with lemon juice, cheese and olives. Serve immediately.

2 bone-in rib eye steaks (about 1 pound each)
1/3 cup loosely packed small rosemary sprigs, leaves picked from stems and coarsely chopped (1/4 cup)
2 tablespoons extra-virgin olive oil
2 garlic cloves

Steps:

  • Place steaks on a plate and pat dry with paper towels; season both sides generously with salt and pepper. Reserve half the rosemary; sprinkle the remaining evenly over top of each steak, pressing to adhere. Let come to room temperature, 20 to 30 minutes.
  • Heat a large cast-iron skillet over medium, then add oil and garlic. When oil is hot but not smoking, push garlic to the edge of pan and add steaks, rosemary side up. Cook steaks until a dark-brown crust forms on the bottom, about 5 minutes. Turn with tongs and cook 3 to 4 minutes more for medium-rare (remove garlic once it begins to turn brown). Transfer steaks to a cutting board to rest 5 minutes.
  • Meanwhile, add reserved rosemary to the skillet; once it begins to sizzle, stir to coat with the oil and, tilting skillet to collect oil, spoon it over the steaks. Slice steaks by cutting parallel to the bone on the diagonal.

4 plum tomatoes, seeded and chopped
1 cup chopped red onion
2/3 cup pitted Greek olives
1/4 cup minced fresh cilantro
1/4 cup lemon juice, divided
2 tablespoons olive oil
2 garlic cloves, minced
2 beef ribeye steaks (3/4 pound each)
1 cup crumbled feta cheese

Steps:

  • For relish, combine tomatoes, onion, olives, cilantro, 2 tablespoons lemon juice, oil and garlic., Drizzle remaining lemon juice over steaks. Grill steaks, covered, over medium heat or broil 4 in. from heat 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 5 minutes before cutting steaks in half. Serve with relish and cheese.

1 1/2 teaspoons garlic powder
1 1/2 teaspoons dried basil, crushed
1 1/2 teaspoons dried oregano, crushed
1/2 teaspoon salt
1/8 teaspoon pepper
2 rib eye steaks (1 3/4 to 2 pounds and 1 inch thick)
1 tablespoon olive oil
1 tablespoon fresh lemon juice
2 tablespoons feta cheese, crumbled
1 tablespoon kalamata olive, chopped

Steps:

  • Combine first 5 ingredients; rub onto all sides of steaks.
  • Pour oil into a large nonstick skillet; place over medium heat until hot. Add steaks, and cook 10 to 14 minutes or to desired degree of doneness, turning once. Sprinkle with lemon juice; top with cheese and olives.
  • Note: I will probably grill the steak. I will brush each steak with olive oil and then rub both sides with the rub. Grill to your liking, then sprinkle with lemon juice, feta cheese and olives.

1 tablespoon garlic salt
1 tablespoon dried basil
1 tablespoon dried oregano
pepper
1 tablespoon olive oil
2 rib eye steaks
2 tablespoons lime juice
1/4 cup feta cheese, crumbled
6 large pitted black olives, sliced

Steps:

  • Mix together rub and rub well over both sides of steaks.
  • Let sit at least 20 minutes in rub.
  • (Longer if possible) Heat oil in heavy skillet on stove top until it sizzles small beads of water.
  • Place steaks in pan and fry on both sides to your prefered doneness.
  • Squirt lime juice on each fried steak and then top with 1/2 cheese and olives on each steak.
  • Serve hot and enjoy.

2 beef ribeye steaks, cut 1" thick
1 tbe olive oil
1 tbs lemon jusic
4 whole pita pocket breads, warmed
2 tbs crumbled feta cheese
1 tbs chopped rib olives
1 1/2 tps garlic powder
1 1/2 tsp dried basil leaves
1 1/2 tsp dried oregano leaves
1/2 tsp salt
1/2 tsp pepper

Steps:

  • 1 - Combine all seasoning ingredients; press into both sides of the beef steaks. In a large nonstick skillet, heat oil over medium heat until hot. Add steaks; cook 12 to 15 minutes for medium rare to medium doneness, turning once. Sprinkle with lemon juice. Let rest for 5 minutes. 2 - To serve, carve steaks into thin strips; arrange equal amounts on top of each pita. Sprinkle with cheese and olives. Serve immediately. Makes 4 servings.

1 pound lean ground beef
2 cloves garlic, pressed or minced

1 (10.75 ounce) can condensed tomato soup, plus
1 (10.75 ounce) can water
