1/2 pound boneless, skinless chicken breast
Salt and freshly ground pepper to taste
1/4 cup extra virgin olive oil
1 small red onion, halved and sliced across the grain
1 pound fresh, sweet ripe but firm tomatoes, cut in wedges
12 kalamata olives, pitted and halved
1 tablespoon fresh lemon juice
1 tablespoon red wine vinegar or sherry vinegar (more to taste)
2 ounces feta cheese, crumbled
3 to 4 tablespoons chopped or torn fresh mint leaves (to taste)
1 heart of romaine lettuce, washed, dried and torn or cut in 1-inch pieces, or 1 bag arugula or spring mix, washed and spun dry

Steps:

  • Preheat the oven to 400 degrees. Season the chicken breasts well with salt and pepper. Toss them in a bowl with 2 tablespoons of the olive oil. Heat a grill pan or a cast iron pan over high heat. Sear the chicken breasts for about 2 minutes on each side, until grill marks appear if using a grill pan, or until nicely browned if using a regular pan. Transfer to a baking sheet and place in the oven. Roast for 10 to 15 minutes, or until a meat thermometer reads 165 degrees when inserted in the thickest part. Remove from the heat and allow to cool.
  • Meanwhile place the sliced onion in a bowl and cover with water. Soak for 5 minutes, drain and rinse well. Drain on paper towels.
  • When the chicken is cool enough to handle tear it into bite-size pieces or a little bigger than bite-size and place in bowl. Add the onion, tomatoes and olives. Season with salt and pepper and toss with the lemon juice, vinegar and remaining olive oil. Add the mint and feta and toss again.
  • Line a platter or wide salad bowl with the lettuce. Top with the chicken and tomato salad, and serve.

1 ¼ teaspoons salt, divided
2 tablespoons diced red onion
1 cup Greek yogurt
⅓ cup chopped Kalamata olives
1 ½ tablespoons chopped fresh dill
2 teaspoons red wine vinegar
2 teaspoons lemon juice
1 teaspoon garlic, minced
1 teaspoon lemon zest
½ teaspoon dried oregano
¼ teaspoon ground black pepper
3 cups diced cooked chicken
¾ cup crumbled feta cheese
½ cup diced seeded plum tomatoes
1 head Bibb lettuce, or more as needed

1 pound fresh or frozen pizza or bread dough, thawed according to package directions
1 1/2 cups grated mozzarella cheese
2 teaspoons garlic flakes
2 cooked chicken breast halves, diced (about 2 cups)
1 cup sliced mushrooms
1/2 cup sliced pitted kalamata olives
1/2 cup crumbled feta cheese
1 teaspoon dried oregano
1 recipe Cherry Tomato Salad, recipe follows
2 cups halved red cherry or grape tomatoes
2 cups halved yellow cherry tomatoes
1/4 cup freshly chopped basil leaves
2 tablespoons red wine vinegar
2 teaspoons olive oil
1 teaspoon Dijon mustard
Salt and coarsely ground black pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Roll dough out into a large rectangle and transfer to a large baking sheet. Top dough with mozzarella cheese, to within 1/2-inch of the edges and then sprinkle garlic flakes all over cheese. Extra yogurt dresses cucumbers and tomatoes that have had a chance to drain with salt so they taste their most vivid. Feta and olives add briny bites to the creamy, crunchy salad, but feel free to incorporate other elements of Greek salad or tzatziki, like romaine lettuce, bell peppers, mint or dill, toasted walnuts or thinly sliced red onion. 3 garlic cloves, finely grated

1 1/2 pounds cucumbers (preferably Japanese, Persian or mini, seedless cucumbers)

Steps:

  • In a large bowl, stir together the yogurt and garlic; season to taste with salt and pepper. Transfer 1/2 cup of the yogurt to a medium bowl and reserve for Step 5.
  • Coat the chicken: To the large bowl, add the oregano and stir to combine. Season the chicken all over with 1 1/2 teaspoons salt and a few grinds of pepper. Add the chicken to the large bowl and turn to coat; set aside.
  • Start the salad: Smash the cucumbers with the side of your knife until craggy and split. Rip into ½- to 1-inch pieces and transfer to a colander placed in the sink. Slice or chop the tomatoes into bite-size pieces. Add to the cucumbers along with 1 ½ teaspoons salt. (It may seem like a lot of salt, but most will drain away.) Toss to combine and leave to drain.
  • In a large nonstick or well-seasoned cast-iron skillet, heat the olive oil over medium. Scrape excess marinade off the chicken, then cook the chicken in batches, adding oil to the pan if necessary, until it's well browned and releases from the pan, 5 to 7 minutes.   • To the medium bowl of yogurt, add the feta and mash with a fork until a chunky paste forms. Shake the cucumbers and tomatoes to get rid of any excess moisture. 1 cup dry white wine

1 tablespoon unsalted butter
1 small onion, diced

6 fresh basil leaves, cut into thin strips, plus more for garnish
2 ounces feta cheese, cut into 1/4 inch cubes (about 1/2 cup)

Steps:

  • Rinse the chicken breasts under cool water, pat dry and place in a shallow glass baking dish.

Season with additional salt and pepper if desired.
  • Return the chicken to the skillet with the sauce. Add the olives and basil and simmer on low for 5 to 8 minutes until the chicken is cooked through and feels firm to the touch.
