GREEK ISLAND CHICKEN SHISH KEBABS

Greek Island Chicken Shish Kebabs image

This is a nice change from the ordinary grilled chicken. This is excellent served with pita bread, a garlicky tzatziki, and a Greek salad. Lamb can be substituted for the chicken, and many variations on vegetables can be used.

Time 2h30m

Yield 6

Number Of Ingredients 15

¼ cup olive oil
¼ cup lemon juice
¼ cup white vinegar
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon dried thyme
¼ teaspoon salt
¼ teaspoon ground black pepper
2 pounds skinless, boneless chicken breast, cut into 1 1/2-inch pieces
6 wooden skewers
2 large green or red bell peppers, cut into 1-inch pieces
1 large onion, quartered and separated into pieces
12 cherry tomatoes
12 fresh mushrooms

Steps:

  • Whisk the olive oil, lemon juice, vinegar, garlic, cumin, oregano, thyme, salt, and black pepper together in a large glass or ceramic bowl. Add the chicken and toss to evenly coat. Cover the bowl with plastic wrap; marinate in the refrigerator for at least 2 hours.
  • Soak wooden skewers in water for about 30 minutes before use.
  • Preheat an outdoor grill for medium-high heat; lightly oil the grate.
  • Remove the chicken from the marinade and shake off excess liquid. Discard the remaining marinade. Alternately thread pieces of the marinated chicken with pieces of bell pepper, onion, cherry tomatoes, and mushrooms onto the skewers.
  • Cook the skewers on the preheated grill, turning frequently until nicely browned on all sides, and the chicken is no longer pink in the center, about 10 minutes.

GREEK ISLAND CHICKEN

Greek Island Chicken image

This recipe is an internet find, though I've forgotten where. Its quick to put together, and served over rice, coucous or orzo makes an entire meal. I'm not sure how authentically Greek it is, but we like the flavor combinations: the sweetness of the cinnamon and the honey balanced by the acidity of the wine and lemon. Make sure to use a drinkable wine for best results.

Time 40m

Yield 2 serving(s)

Number Of Ingredients 13

2 boneless skinless chicken breasts
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1 red bell pepper, cut in strips
3/4 ounce sun-dried tomato (not oil-packed)
1 1/2 cups dry white wine
1/3 cup pitted black olives, sliced
1 lemon, sliced and pips removed
1 1/2 teaspoons cinnamon
1 teaspoon honey
salt and pepper
chopped parsley, to garnish

Steps:

  • Add oil to a large skillet over medium heat, and saute chicken breasts on all sides, about 5 minutes.
  • Remove from skillet, and set aside.
  • Add onion and red pepper to skillet and saute for one minute.
  • Add garlic, and continue cooking for 3 minutes, or until onion begins to go limp.
  • Cut the sun-dried tomatoes in half, and add them to the skillet, along with all remaining ingredients except lemons and parsley.
  • Mix well.
  • Add the chicken breasts and any collected juices back to the pan, turning them over once to get them covered with the skillet juices.
  • Lay the lemon slices on top of the other vegetables around the skillet.
  • Cover, and simmer for 15 minutes, occasionally basting breasts with pan juices.
  • Remove cover and cook 5 additional minutes, until chicken is tender and the sauce is slightly reduced.
  • If you want a less liquid sauce, remove the chicken to serving dish at this point, increase heat and boil a minute or two, or until juices are boiled down to your desire.
  • Spoon sauce and vegetables over chicken, garnish with parsley and serve.

GREEK ISLAND SALAD WITH CHICKEN & AVOCADO

Jill Dupleix's colourful and summery avocado salad is perfect for a casual buffet

Provided by Good Food team

Categories     Dinner, Lunch, Side dish

Time 50m

Number Of Ingredients 13

1.8kg roasted chicken, at room temperature
2 hearts romaine lettuces
4 tomatoes
3 spring onions
2 ripe avocados
3 tbsp lemon juice, plus extra for squeezing
200g packet feta cheese
½ tsp dried oregano
½ tsp dried mint
half a bunch of flatleaf parsley
5 tbsp extra-virgin olive oil
2 tbsp black kalamata olives
pitta bread, to serve (optional)

Steps:

  • Pull the meat from the chicken and shred it roughly. Trim the base from each lettuce, wash and dry the leaves, then roughly shred them. Cut the tomatoes into wedges. Finely slice the spring onions (using both white and green parts). Cut the avocados in half lengthways, remove the stones and peel. Cut crosswise into slices, and squeeze with lemon juice. Crumble the feta cheese with your fingers and toss it with the dried oregano and mint. Pick the leaves off the parsley and set aside.
  • Whisk the 3 tbsp of lemon juice with the olive oil, sea salt and pepper. In a large bowl, toss the chicken, lettuce, tomatoes and spring onion, then fold through three quarters of the dressing with the avocados (carefully, so the avocados don't break up). Season with salt and pepper, then scatter over the feta, olives and parsley, and drizzle with the rest of the dressing. Squeeze extra lemon juice on top, and serve with pitta bread if you wish.

CLASSIC GREEK CHICKEN SOUVLAKI

Classic Greek Chicken Souvlaki image

This is a classic Greek recipe for tender and very flavorful chicken souvlaki!

Provided by Marilena Leavitt

Categories     Main course

Yield 6

Number Of Ingredients 13

1 TBSP. lemon zest
¼ cup lemon juice
3 med. garlic cloves, minced
¼ cup olive oil
2 tsp. dried Greek oregano
1 tsp. dried spearmint
1 tsp. sea salt
½ tsp. freshly ground black pepper
1 sm. red onion
1½ lbs. chicken thigh meat (or breast meat), boneless and skinless
--- --- salt and pepper
6 --- metal skewers (or wooden skewers soaked in water for 2 hours)
4-6 pieces Mediterranean pita bread (pocket-less type)

Steps:

  • Over a medium bowl, zest the lemon, making sure you do not grate any of the pith (white part of the peel). Add the juice of the lemons.
  • Mince the garlic and add it to the bowl. Next, add the olive oil, oregano, spearmint, salt and pepper. Mix well. Reserve one third of your marinade to brush on your kebabs before serving.
  • Cut the red onion into quarters, separate each one into 3 or 4 sections and then set aside.
  • Cut the chicken in 1½-inch cubes and add to the bowl with the lemon, oil and herbs. Mix well to coat the chicken with the marinade, then cover with plastic wrap and refrigerate for 4-6 hours (another trick is to mix them all in a large, zip-lock-style bag, tossing regularly).
  • Prepare a grill or set a grill pan over two burners and heat over medium-high heat. Loosely thread the pieces of chicken onto the skewers, alternating the chicken with sections of onion. Sprinkle both sides of the chicken kebabs with salt and pepper. Place the skewers on the hot grill and cook for 10 to 15 minutes, turning a couple of times, until the chicken has nice grill marks and is cooked through. Brush some of the reserved marinade on the hot kebabs and remove to a serving plate. Cover loosely with foil to keep warm.
  • Place the pita on the hot grill until just heated through.
  • To serve, cut the pita into wedges and arrange on the plater, alongside some tzatziki sauce (made with Fage yogurt), chopped red onions, cubes of Greek Feta cheese, grape tomatoes cut in half. Generously sprinkle with some dried oregano. Add the warm kebabs on the platter and serve right away. Enjoy a real Greek feast!

ISLAND CHICKEN

Island Chicken image

This recipe was given to chef Keith Famie by one of the locals from Bora-Bora. It really showcases the flavor of Polynesia. This is a nice change of pace from your regular roasted chicken. The chicken gets crispy on the outside, but is nice and tender on the inside. Note: Use low-sodium soy sauce so the chicken doesn't get too salty.

This is a common meal enjoyed in Greece. It's incredibly delicious, and while it's cooking, the smell will have everyone in the house hanging around the kitchen. I find that the chicken stays moist if it is covered for the the first 20 minutes of baking. Serve with a crisp salad and crusty bread or pita.

GREEK ISLAND CHICKEN (D) RECIPE

Greek Island Chicken (D) Recipe image

Provided by Deeee

Number Of Ingredients 16

1 tbsp olive oil
4 boneless skinless chicken breast halves
1 red onion chopped
2 garlic cloves minced
3 oz mushrooms sliced
1 cup dry white wine
1 cup marinated artichoke hearts, drained
1/3 cup coarsely chopped drypack sun-dried tomatoes
1/4 cup pitted Greek olives
1 tsp lemon-pepper seasoning
1 tsp honey
1/4 tsp salt
1/2 tsp oregano
1/2 tsp cinnamon
1/2 cup crumbled feta cheese
4 lemon wedges

Steps:

  • Warm oil in a large nonstick skillet over medium-high heat. Add chicken and cook 5 minutes on each side, or until browned. Remove to a plate. Reduce heat to medium and add onion and garlic to the same skillet. Cook 5 minutes or until onion is tender. Stir in mushrooms. Cook 10 minutes, or until mushrooms render their juices. Add wine, artichokes, tomatoes, olives, lemon-pepper seasoning, honey, salt, oregano, cinnamon, and chicken. Reduce heat to low, cover, and cook 15 minutes. Uncover and cook 5 minutes or until sauce thickens slightly and a thermometer inserted in thickest portion registers 160F and juices run clear. Sprinkle with cheese. Serve with lemon for squeezing. WW 8pts

Tips:

  • Choose the right chicken. Bone-in, skin-on chicken breasts or thighs are best for this recipe, as they will stay moist and juicy during cooking.
  • Use a flavorful marinade. The marinade is what will give your chicken its flavor, so make sure to use a blend of herbs, spices, and citrus that you enjoy.
  • Don't overcrowd the pan. When searing the chicken, make sure to give each piece plenty of space so that it can brown evenly.
  • Cook the chicken until it is cooked through. The best way to check if the chicken is cooked through is to use a meat thermometer. The internal temperature should be 165 degrees Fahrenheit.
  • Let the chicken rest before serving. This will help the juices redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Greek Island Chicken is a flavorful and easy-to-make dish that is perfect for a weeknight meal. The combination of herbs, spices, and citrus gives the chicken a delicious flavor that is sure to please everyone at the table. Serve with your favorite sides, such as rice, potatoes, or vegetables.
