GREEK SALAD PITAS WITH HUMMUS

Greek Salad Pitas With Hummus image

Very light and yet filling at the same time. I just put these together the other day, so all of the ingredient amounts are approximate. You could add any number of things to the salad that you like (bell peppers, red onion, etc.). Also, my pitas were thin and large. If you use thicker and/or smaller pitas, obviously you won't fit as much in each portion. The hummus really adds character to these sandwiches (and also a little protein). Enjoy!

Provided by Clifford Hutson

Categories     100+ Breakfast and Brunch Recipes     Eggs

Time 1h35m

Yield 8

Number Of Ingredients 14

1 pound thick-cut bacon, cut into 2-inch squares
2 cups plain Greek yogurt
2 cucumbers, peeled
3 cloves garlic, minced
2 teaspoons ground white pepper
kosher salt to taste
1 ½ pounds breakfast sausage, crumbled
4 pita bread rounds
1 (16 ounce) bag spring mix greens
3 Roma tomatoes, diced
1 white onion, thinly sliced
½ cup olive oil, divided
8 eggs
salt and ground black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). (Set countertop conduction oven to Combo 2.) Line a rimmed baking sheet with aluminum foil, extending it up the sides.
  • Arrange bacon in a single layer on the foil (slight overlapping is okay as bacon will shrink). Place in preheated oven and cook until your desired level of doneness is reached, 10 and 20 minutes. (For countertop induction oven, cook bacon 8 to 10 minutes.) Transfer bacon to a paper-towel lined plate to drain and reserve bacon fat.
  • Place Greek yogurt in a bowl. Cut 1 cucumber in half and grate half into the yogurt. Stir in minced garlic, white pepper, and kosher salt to make tzatziki sauce.
  • Slice the remaining cucumber into thin slices and set aside.
  • Heat a large skillet over medium heat. Add sausage; cook and stir until browned, 5 to 8 minutes. Transfer to a bowl. Drain grease.
  • Transfer bacon fat to skillet over medium heat. Add pita rounds; toast until golden brown, about 30 seconds per side. Drain on paper towels.
  • Top each pita with bacon and sausage. Layer tzatziki sauce, spring mix, Roma tomatoes, cucumber slices, and onion on each pita.
  • Heat 1 tablespoon oil in a small skillet. Crack in 1 egg; cook until set but still soft, about 1 1/2 minutes per side. Place egg on top of layered pita. Repeat with remaining oil and eggs. Season with salt and pepper.

GREEK GRILLED CHICKEN PITAS

Greek Grilled Chicken Pitas image

This is from the Taste of Home website. It was a great recipe as written, but I add mint and Kalamata olives when I make these. So I've added them to the ingredient list because I think those two changes make the pitas even more delicious. They're pretty filling, so I don't always serve side dishes to go along with the pita...

Provided by Vickie Parks

Categories     Sandwiches

Time 4h35m

Number Of Ingredients 19

MARINADE
1/2 c balsamic vinaigrette
1 lb skinless chicken breasts
CUCUMBER SAUCE
1 c plain greek yogurt
1/2 c finely chopped cucumber
1/4 c finely chopped red onion
1 Tbsp fresh mint or fresh parsley
1 Tbsp lime juice
2 clove garlic, minced
1/4 tsp salt
1 pinch black pepper
PITA POCKETS
8 pita pocket halves
1/2 c chopped cucumber
1/2 c kalamata olives, quartered
1/2 c grape tomatoes, chopped
1/2 c chopped red onion
1/2 c crumbled feta cheese

Steps:

  • 1. Pour vinaigrette into a large re-sealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for at least 4 hours or overnight.
  • 2. In a small bowl, combine the sauce ingredients; chill until ready to serve.
  • 3. Preheat grill or oven broiler.
  • 4. Drain and discard marinade. Grill or broil chicken breasts until done, turning halfway through cooking to ensure even cooking on both sides, about 5 to 8 minutes each side or until a thermometer reads 170°. Cut chicken into thin strips.
  • 5. Fill each pita half with chicken, cucumber, olives, tomatoes, onion and cheese. Spoon cucumber sauce on top of each pita half. Serve immediately

Tips:

  • Use high-quality ingredients: Using fresh, flavorful ingredients will make a big difference in the taste of your pitas.
  • Knead the dough well: Kneading the dough helps to develop the gluten, which gives the pitas their chewy texture.
  • Let the dough rise: Allowing the dough to rise gives the yeast time to work and produce carbon dioxide gas, which creates the pockets of air in the pitas.
  • Cook the pitas over high heat: Cooking the pitas over high heat helps to create a crispy exterior and a fluffy interior.
  • Serve the pitas warm: Pitas are best served warm, when they are soft and fluffy.

Conclusion:

Greek pitas are a delicious and versatile bread that can be enjoyed in many different ways. They can be used to make sandwiches, wraps, or even pizzas. With a little practice, you can easily make your own Greek pitas at home. So next time you're looking for a quick and easy meal, give Greek pitas a try!
