This is a wonderful dessert salad that never failed to be a hit. Made the day before the brown sugar makes the sauce taste like caramel. You can use less brown sugar, if you wish.

1 pint cherry tomatoes, halved (or grape tomatoes)
1/2 red onion, sliced in half-rounds
1/2 lb feta cheese, 1/2-inch diced (not crumbled)
1/2 cup kalamata olive, pitted
2 garlic cloves, minced
1 teaspoon dried oregano

  • For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion.
  • Pour the vinaigrette over the vegetables.
  • Add the feta and olives and toss lightly.
  • Set aside for 30 minutes to allow the flavors to blend. Serve at room temperature.
  • Tips from me:
  • To reduce the sharpness of the onion, soak the sliced onion in ice cold water for 30 minutes and pat with paper towels to dry, before adding to salad.
  • To cut down on prep time, place a single layer of cherry/grape tomatoes between two Tupperware lids (or flat plates, etc.) and slice through all of them at once, using a sharp knife.

Tips:

  • Choose ripe, flavorful tomatoes: Use high-quality tomatoes that are in season for the best flavor. Look for tomatoes that are firm and have a deep red color.
  • Use a variety of greens: Feel free to mix and match different types of greens in your salad. Some popular options include romaine lettuce, arugula, spinach, and kale.
  • Don't overcrowd your salad: When assembling your salad, be careful not to overload it with ingredients. A good rule of thumb is to use about 1 cup of greens per person.
  • Dress your salad just before serving: This will help prevent the greens from becoming soggy. If you're making your salad ahead of time, store the dressing separately and add it just before serving.
  • Use a light hand with the dressing: A little bit of dressing goes a long way. Start with a small amount and add more to taste.

Conclusion:

Greek salad with green grapes is a refreshing and flavorful salad that is perfect for any occasion. It's easy to make and can be customized to your liking. So next time you're looking for a healthy and delicious salad, give this recipe a try. You won't be disappointed!
