Steps:
- Preheat the oven to 450 degrees F.
- For the vegetables: In a large bowl, whisk the white wine, olive oil and garlic. Add the artichokes, haricot vert, tomatoes, olives, capers and onions and toss to coat. Season with about 1/2 teaspoon salt and 1/4 teaspoon pepper. Transfer the mixture to a baking sheet and evenly spread out. Roast until the tomatoes begin to release their juices, 10 to 12 minutes.
- For the shrimp: While the vegetables are roasting, use the same bowl and mix together the olive oil, oregano, red pepper, garlic and lemon zest and juice. Add the shrimp and toss to coat. Season with about 1/4 teaspoon salt and a pinch of black pepper.
- Drizzle the baguette pieces with olive oil.
- Remove the baking sheet from the oven and add the shrimp. Stir and evenly spread out the shrimp and vegetables. Add the pieces of baguette around the perimeter. Roast until the shrimp is pink and opaque, 8 to 10 minutes.
- Transfer to a serving bowl, sprinkle with the crumbled feta and serve with the bread.

GREEK SOUVLAKI
This is posted in response to a request for "skewer" recipes. A real coincidence as this was being prepared on the food network by Nick Makris from Nick's Diner in Regina Sask - it looked SO GOOD I just had to post it. Use pork or lamb - serving with pita bread is optional but tzatziki is a must! Prep time includes a minimum of 2 hours for marinating.

PORK SOUVLAKI
So good broiled, wonderful luncheon or dinner with a Greek salad and rice pilaf. adapted from Canadian Living mag. (cook time includes 10 minutes marinating time) The photo shows them in a pita, have tried them both ways in and on, equally good either way, also so good just over rice, preferable brown rice.

Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make your souvlaki taste its best. Look for tender cuts of meat, crisp vegetables, and flavorful herbs and spices.
- Marinate your meat: Marinating the meat in a flavorful mixture of oil, herbs, and spices will help to tenderize it and infuse it with flavor. You can marinate the meat for as little as 30 minutes or up to overnight.
- Cook the meat over high heat: Souvlaki is traditionally cooked over high heat, which helps to sear the outside of the meat and keep it juicy on the inside. If you're using a grill, cook the meat over direct heat. If you're using a stovetop, heat a large skillet over high heat.
- Don't overcook the meat: Souvlaki is best when it's cooked to medium-rare or medium. Overcooked meat will be tough and dry.
- Serve the souvlaki with your favorite toppings: Some popular toppings for souvlaki include tzatziki sauce, grilled vegetables, and pita bread.
Conclusion:
Souvlaki is a delicious and versatile dish that can be enjoyed in many different ways. Whether you're grilling it, roasting it, or pan-frying it, souvlaki is sure to be a hit with your family and friends. So next time you're looking for a quick and easy meal, give souvlaki a try!
