1 pound San Marzano or small plum tomatoes (on the vine if possible)
6 tablespoons extra virgin olive oil (divided)
Kosher salt
1 clove garlic (finely sliced)
1 tablespoon parsley leaves (finely chopped)
1 tablespoon mint leaves (finely chopped)
1 teaspoon dried oregano
2 tablespoons capers (rinsed)
1 tablespoon red wine vinegar
3/4 pound spaghetti
1/4 cup Kalamata olives (pitted and chopped)
1/4 cup Halkidiki green olives (pitted and chopped)
1/4 pound crumbled feta cheese
Freshly ground black pepper

Steps:

  • Gather the ingredients. Preheat the oven to 325 F and put a large pot of well-salted water on to boil.
  • Place the whole tomatoes (including the vine if your tomatoes have one) into a ceramic or metal oven dish. Drizzle with 2 tablespoons of olive oil and a good pinch of salt. Roll the tomatoes around a little to cover everything with the oil, then add the garlic slices distributing them evenly into the dish. Place the dish in the center of the preheated oven and cook for 15 minutes. The tomatoes will soften and the skin may split.
  • While the tomatoes are cooking, prepare the sauce. Put the chopped parsley, mint, and oregano in a small bowl. Add the rinsed capers, red wine vinegar, and the remaining 4 tablespoons olive oil. Whisk together to create a thick, creamy looking dressing and put it to one side; do not place in the refrigerator.
  • Boil your spaghetti as per the instructions until al dente . Once cooked, drain the pasta and tip back into the warm pan. Stir in the dressing while the spaghetti is hot; it will become very fragrant. Add in the chopped black and green olives and the tomatoes and garlic, including any juice from the cooking dish.
  • To serve either, either transfer the pasta into a large warmed serving bowl for everyone to help themselves or into four individual warmed bowls. Before serving, cover the pasta with a generous helping of feta cheese and freshly ground black pepper.

1/2 pound ground beef
1/2 pound ground lamb
1 large onion, chopped
4 garlic cloves, minced
3 teaspoons dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 tablespoon lemon juice
1 teaspoon sugar
1/4 teaspoon ground cinnamon
2 cups uncooked rigatoni or large tube pasta
4 ounces feta cheese, crumbled

Steps:

  • In a large skillet, cook beef and lamb over medium heat until no longer pink; drain. Stir in the onion, garlic, oregano, basil, salt, pepper and thyme. Add the tomato sauce, tomatoes and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes, stirring occasionally. , Stir in sugar and cinnamon. Simmer, uncovered, 15 minutes longer., Meanwhile, cook the pasta according to package directions; drain. Stir into meat mixture. , Transfer to a greased 2-qt. baking dish. Sprinkle with feta cheese. Cover and bake at 325° for 45 minutes. Uncover; bake 15 minutes longer or until heated through. Freeze option: Cool unbaked casserole; cover and freeze. 1 large bell pepper, chopped
2 large onions, chopped
1/2 cup margarine
1 (7 ounce) package spaghetti noodles
1 (2 1/4 ounce) can black olives, chopped, drained
1 (4 ounce) can mushrooms, slightly chopped, drained
1 (28 ounce) can diced tomatoes, not drained
1 (10 1/2 ounce) can cream of mushroom soup, add 1/2 can water
8 ounces sour cream

Steps:

  • Cook noodles, drain and rinse. Melt margarine and saute onions and peppers until tinder. Mix olives, mushrooms and tomatoes with peppers and onions.
  • Mix mushroom soup with 1/2 can water and 8 oz sour cream together.

1 medium chopped onion
2 teaspoons dried oregano (or to taste)
2 tablespoons fresh minced garlic
1/2 cup red wine
1/4 cup water
3/4 teaspoon cinnamon

1 teaspoon fresh ground black pepper (or to taste)
1 (14 ounce) can tomatoes (undrained)
1/4 cup flour
2 cups half-and-half cream
1/2 teaspoon allspice
1 cup mozzarella cheese, grated

1 egg

7 ounces spaghetti (cooked and drained)

Steps:

  • Heat the oven to 375 degrees F.

  • Top with 2 cups of cooked ground beef mixture, then 1 cup of cream sauce.
  • Repeat the layers.
  • In a small bowl, combine the 1/2 cup bread crumbs with 2 Tbsp Parmesan cheese; sprinkle over the top of the casserole.
  • Bake for 25-30 minutes, or until hot and bubbly.

This comforting Greek baked pasta, which bears a striking resemblance to lasagna, derives its name from the Italian word "pasticcio." That translates to English as "a mess," indicating the forgiving, flexible nature of the dish. Many traditional pastitsio recipes call for beef -- which you can certainly use here -- but we use ground lamb for a fresh take on a classic (and many cooks prefer a combination). Because kefalotyri cheese and the long tubular noodles traditionally used in pastitsio can't be found in most American supermarkets, we substituted Parmesan and ziti in their place, but by all means, if you can get your hands on the real things, use them. The noodles and spiced meat sauce are layered in a casserole dish then topped with a creamy béchamel sauce and baked until golden. It's project cooking that's perfect for a cold winter's night.

Steps:

  • Make the sauce: In a large, deep skillet, heat the olive oil over medium. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, 1 minute.

  • Once the water boils, cook the pasta according to package instructions until 2 minutes short of al dente (the pasta will finish cooking in the oven).
