Steps:

2-10.5 ounce cans cream of celery soup
½ cup milk
salt and pepper
1 small can (2.8 ounce) French fried onions

Steps:

  • Place the fresh or frozen green beans in a large kettle with enough water to cover and bring to a boil. Cook for 5-6 minutes until the vegetables are bright green in color and slightly tender. Drain well in a colander with ice cold tap water. Remove as much excess water as possible by laying the beans out on a clean towel and blotting dry.
  • Preheat your oven to 350 degrees.
  • Grease a 2-quart casserole baking dish with butter or vegetable cooking spray.
  • Place ½ of the green beans into the casserole dish. Follow with a layer of ½ the can of water chestnuts.
  • Repeat with another layer of green beans and water chestnuts.

1 pound button mushrooms, trimmed and coarsely chopped
14.5 ounces low-sodium chicken broth
1 cup whole milk

Steps:

  • Preheat oven to 425 degrees. In a large skillet, heat oil over medium. Line a baking sheet with paper towels. In a large bowl, toss together shallots and 1 1/4 cups flour until shallots are evenly coated. In batches, shake off excess flour from shallots and fry until golden and crisp, about 5 minutes, adjusting heat if shallots are browning too quickly. With a slotted spoon, transfer to sheet and season with salt. Set aside. (Store in an airtight container at room temperature with a layer of paper towels underneath, up to 2 days.)

3 cups coarse fresh breadcrumbs
6 ounces peeled roasted chestnuts, coarsely chopped (1 1/4 cups)
1/2 cup coarsely chopped fresh parsley leaves
1 1/2 cups whole milk
1 1/2 cups heavy cream
1 clove garlic, minced
10 ounces mixed mushrooms, such as cremini, oyster, and trumpet, sliced (4 cups); plus 2 trumpet mushrooms, thinly sliced lengthwise (optional)
1 onion, finely chopped (2 cups)
1/4 cup unbleached all-purpose flour
Pinch of freshly grated nutmeg
Extra-virgin olive oil, for tossing (optional)

Steps:

  • Preheat oven to 350°F. Generously brush a 3-quart baking dish with butter. Prepare a bowl of salted ice water. Cook green beans in a large pot of generously salted boiling water until crisp-tender and dark green, 3 to 4 minutes. Drain; immediately transfer to ice water until thoroughly chilled. 50g butter
2 tbsp olive oil
250g chestnut or button mushrooms, sliced
500g green beans, trimmed
50g flour
500ml milk
100g crispy onions

Steps:

  • Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
  • Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
  • Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.

1 teaspoon reduced-sodium soy sauce

1 cup crushed french-fried onions

  • Preheat oven to 350°. 1 1/2 cups water
1 1/2 teaspoons salt
1 (5 ounce) can water chestnuts, sliced, drained

1/2 cup whole milk
2 cans French fried onions rings

Steps:

  • Combine water, beans and salt. Bring to a quick boil.
  • Reduce heat until it has thawed and slightly crisp. **About 4 minutes** Drain them.
  • In a 2 quart casserole dish, layer the beans and chestnuts.
  • Next, mix the milk and soup into a separate bowl. Add pepper.
  • Pour this over the beans and chestnuts. Bake at 350* for 25 minutes.

If you want your green beans to be more cooked and less crunchy, I'd simmer them for 10 minutes in the blanching step, instead of the recommended 5 minutes.

8 ounces fresh mushrooms, diced
1/2 cup butter
1/2 cup flour

  • While the green beans are cooking, put a large amount of heavily iced water in a large pot or bowl.
  • Drain the green beans, and put immediately in the iced water to stop the cooking.
  • Preheat the oven to 350º.
  • Sauté the onions and mushrooms in the butter for 10 minutes over medium heat.
  • Add the flour, using a whisk to combine it with the butter, onions, & mushrooms. Add milk and whisk in, stirring over medium heat until the sauce begins to thicken.
  • Add the cheese and whisk until it melts into the sauce. Add the Tabasco, soy sauce, pepper and salt.
  • Drain the green beans.
  • In a large mixing bowl, combine the green beans, water chestnuts, one can of the French's Fried Onions, and the sauce. Combine well.
  • Place the green bean mixture in a large casserole dish.
  • Bake at 350º for one hour - top the casserole with the remaining can of fried onions after 45 minutes.
