½ pound bacon
4 skinless, boneless chicken breast halves
1 tablespoon butter
20 ounces fresh green beans, washed and trimmed
1 (10.75 ounce) can condensed cream of Cheddar cheese soup
1 pinch ground cayenne pepper
½ cup seasoned dry bread crumbs
2 cups shredded Cheddar cheese

Steps:

  • Place the bacon in a skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside. Melt the butter in a skillet, and saute the chicken breasts 10 to 12 minutes on each side, until the exterior is golden, the meat is no longer pink, and the juices run clear.
  • Place the green beans in a saucepan with enough water to cover. Bring to a boil, and cook 5 minutes, or until tender.
  • Preheat the oven broiler. Lightly grease a 9x13 inch baking dish.
  • Arrange the beans in the bottom of the prepared baking dish. Top with the chicken, and cover evenly with the soup. Sprinkle with bread crumbs and bacon, and top with Cheddar cheese.
  • Broil 10 minutes, or until browned and bubbly.

½ cup butter
4 cloves garlic, minced
¾ cup dry bread crumbs
½ cup freshly grated Parmesan cheese
1 ½ cups shredded Cheddar cheese
¼ teaspoon dried parsley
¼ teaspoon dried oregano
¼ teaspoon ground black pepper
⅛ teaspoon salt
8 skinless, boneless chicken breast halves - pounded thin

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.
  • In a shallow bowl, mix the bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.

1 pound fresh green beans, trimmed
2 large tomatoes, chopped
1 medium onion, chopped
1 cup chicken broth
1/4 cup snipped fresh dill
2 to 3 tablespoons lemon juice
2 garlic cloves, minced
4 bone-in chicken thighs (about 1-1/2 pounds)
1 tablespoon olive oil
3/4 teaspoon salt
1/4 teaspoon pepper
Optional: Lemon wedges and additional snipped fresh dill

Steps:

  • Combine the first 7 ingredients in a 5- or 6-qt. slow cooker. Top with chicken. Drizzle with oil; sprinkle with salt and pepper. 4 cups cubed cooked chicken
1-3/4 cups frozen french-style green beans
