GREEN BEAN SALAD WITH CORN, CHERRY TOMATOES & BASIL

Green Bean Salad with Corn, Cherry Tomatoes & Basil image

If you can't find ripe, juicy cherry tomatoes, substitute small wedges of ripe beefsteak tomatoes.

Provided by Tasha DeSerio

Categories     Side dishes

Yield six to eight.

Number Of Ingredients 10

3 cups fresh corn kernels (3 to 4 ears)
Kosher salt
1 lb. fresh green beans, trimmed and cut in half diagonally
1 small red onion, cut in half through the root end, root trimmed, and cut lengthwise into very thin slices
1 clove garlic
1/4 cup red-wine vinegar; more to taste
1/3 cup extra-virgin olive oil
1 pint cherry tomatoes, cut in half
1 cup roughly chopped fresh basil
Freshly ground black pepper

Steps:

  • Bring a medium pot of water to a boil. Add the corn kernels and blanch for 1 min. Scoop out the corn with a strainer; set aside. Season the water with a generous amount of salt, let it return to a boil, add the beans, and cook until just tender, about 3 min. Drain the beans and spread them on a baking sheet to cool.
  • Meanwhile, put the onion in a small bowl filled with ice water (which will crisp it and mellow its flavor). Using a mortar and pestle or the flat side of a chef's knife, mash the garlic to a paste with a pinch of salt. Put the paste in a small bowl (or keep it in the mortar) and whisk in the vinegar. Let sit for 5 to 10 minutes and then whisk in the olive oil. Garlic cloves mashed to a paste add a tasty kick. I use a large granite mortar and pestle to pound the cloves to a paste, but you can also use the flat part of a chef's knife to mash the garlic. A pinch of kosher salt helps the process along.
  • Just before serving, drain the onions. Put the beans, corn, onions, cherry tomatoes, and basil in a large bowl. Season with salt and pepper and toss with the vinaigrette. Taste again and add more salt, pepper, or vinegar if needed. Serve right away.

GARDENER'S SWEET CORN AND CHERRY TOMATO SALAD

Gardener's Sweet Corn and Cherry Tomato Salad image

This salad is a celebration of the summer garden- fresh ripe corn, sweet juicy cherry tomatoes still warm from the summer sun, and basil picked from the herb garden. I like Yellow Pear and Sweet Million tomatoes, but use whatever grows well in your garden. This is a very simple recipe that is all about using the best that the summer garden can offer. Second rate ingredients will not produce the same result. If you're reading this in the winter, save it until you can use fresh, local produce! You'll be glad you did.

Categories     Low Protein

Time 5m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 tablespoon extra virgin olive oil
1 teaspoon red wine vinegar
kosher salt
black pepper, freshly ground
3 cups corn kernels (from about 6 cooked ears of corn)
20 cherry tomatoes (red or yellow or combined)
2 tablespoons fresh basil leaves, thinly siced
1 tablespoon flat-leaf Italian parsley, chopped

Steps:

  • In a large mixing bowl, whisk the oil and vinegar with salt and pepper to taste to form a dressing.
  • Add the remaining ingredients, and toss to coat with the dressing.
  • Taste, and reseason if necessary.

Tips:

  • For the best flavor, choose fresh, ripe cherry tomatoes and corn. If you can, get them from a local farmers market or organic grocery store.
  • Blanching the green beans helps to preserve their bright green color and crisp texture. Be sure to shock them in ice water immediately after blanching to stop the cooking process.
  • Grilling the corn adds a delicious smoky flavor to the salad. If you don't have a grill, you can also roast the corn in a hot oven.
  • Use a good quality olive oil and balsamic vinegar for the dressing. These ingredients will help to enhance the flavors of the salad.
  • Feel free to add other ingredients to the salad, such as crumbled feta cheese, diced avocado, or chopped red onion.

Conclusion:

This green bean, cherry tomato, and grilled corn salad is a delicious and refreshing side dish that is perfect for summer gatherings. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a healthy and flavorful salad, give this one a try!
