GREEN BEANS AND HAM HOCKS

Green Beans and Ham Hocks image

It has been cold and snowing here. Just the right weather for soups and comfort food. These green beans and ham hocks are so good. They do not need any added spices or seasoning but you can add them if you desire. There is no need to add salt to these since the ham hocks/shanks are already salty. I am sensitive to pepper so I did not add any to these but you can if you want to. I just don't know how much to add. They can be served as a meal with cornbread or as a side dish with meat This can easily be turned into soup by adding other vegetables. Cook time varies according to your crockpot. When I lower my 3.5 quart crockpot to low, it does not boil or even simmer so I cook these on high the whole time. Stovetop method time is approximate. These smell so good while they cook.

CROCK POT GREEN BEANS & HAM

Crock Pot Green Beans & Ham image

I came up with this recipe when I had an abundance of fresh green beans. After canning 30 quarts, I knew I needed to find something else to do with all those beans! It's easy to prepare and one of my family's "comfort food" favorites. NOTE: not every crockpot cooks the same. My Rival crock pot is 20 years old and on the "high" setting food actually comes to a low boil. If your crock pot does not get that hot, then you will need to adjust for a longer cooking time.

  • Soak the Ham Hocks: Soaking the ham hocks in cold water for several hours or overnight helps to remove excess salt and impurities.
  • Simmer, Don't Boil: Maintain a gentle simmer throughout the cooking process to prevent the ham hocks from becoming tough.
  • Use a Large Pot: Choose a pot large enough to accommodate the ham hocks and other ingredients comfortably.
  • Season Generously: Don't be shy with the seasonings. Experiment with various herbs, spices, and aromatics to create a flavorful broth.
  • Add Vegetables Gradually: Add vegetables like green beans, potatoes, and carrots at different times to ensure they cook evenly.
  • Thicken the Broth: If desired, thicken the broth by adding a cornstarch or flour slurry towards the end of cooking.
  • Serve with Sides: Accompany the green beans and ham hocks with cornbread, mashed potatoes, or rice for a complete meal.
