Swiss Chard and Golden Raisins image

Provided by Rachael Ray : Food Network

Categories     side-dish

Time 25m

Yield 6 servings

Number Of Ingredients 8

2 1/2 pounds (the average weight of 2 bundles) red Swiss chard
1 1/2 tablespoons (1 1/2 turns around the pan in a slow stream) extra-virgin olive oil
1/8 pound, 2 slices, pancetta or bacon, chopped
1 small yellow skinned onion, chopped
1/4 cup (2 handfuls) golden raisins
14 ounces chicken stock or broth
Coarse salt
1/8 teaspoon nutmeg, a couple pinches ground or equivalent of freshly grated

Steps:

  • Heat a large skillet over medium high heat. Coarsely chop the greens of clean red chard. Add oil, pancetta, and chopped onion to the pan and cook 2 or 3 minutes until onions begin to soften and pancetta is lightly browned. Add chopped chard to pan in large bunches, adding remaining chard as the greens wilt.
  • Sprinkle in raisins, pour in broth and season with salt and nutmeg. Bring liquid to a boil, reduce heat and simmer greens 10 to 15 minutes until greens are no longer bitter and you are ready to serve. Raisins will plump as the dish cooks through.

PAN-ROASTED GREEN BEANS WITH GOLDEN ALMONDS

Pan-Roasted Green Beans With Golden Almonds image

This simple almond-shallot topping goes with just about any simply cooked vegetable, but it tastes best with green beans. Instead of simply blanching the beans, I char them until they develop a smoky richness.

Provided by Tara Parker-Pope

Time 30m

Yield 4 servings

Number Of Ingredients 8

Kosher salt
8 ounces green and/or wax beans, trimmed
1/4 cup blanched whole almonds, coarsely chopped
3 tablespoons extra-virgin olive oil, plus more as needed
1 large shallot, minced
1 tablespoon fresh flat-leaf parsley leaves, thinly sliced
1 lemon
Freshly ground black pepper

Steps:

  • Bring a large pot of water to a rolling boil and add salt (a teaspoon or so, or to taste). Fill a large bowl with ice and water. Add the green beans to the boiling water and cook until bright green but still firm, about 2 minutes. Drain and transfer to the ice water. When cool, drain again. Pat dry with paper towels until completely dry.
  • Meanwhile, in a small saucepan, combine the almonds and the oil, adding more oil if needed to just cover the almonds. Cook over medium heat until the almonds are golden, about 6 minutes. Remove from the heat and stir in the shallot. It will cook in the residual heat.
  • Coat a large skillet with oil. Heat over medium-high heat until very hot but not smoking. Add the beans and season with salt. Cook, tossing frequently, until charred dark brown in spots and tender-crisp, about 7 minutes.
  • Top with the almond mixture, then the parsley. Grate the zest from a quarter of the lemon directly over the beans, then cut the lemon into wedges for serving. Season with pepper and serve.

Tips:

  • Choose fresh, tender green beans: Look for beans that are bright green in color and have no blemishes or bruising.
  • Trim the green beans: Remove the tough ends of the beans before cooking. You can do this by snapping them off or using a sharp knife.
  • Blanch the green beans (optional): Blanching the green beans in boiling water for a few minutes helps to preserve their color and crispness. To blanch the green beans, bring a large pot of water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately transfer the green beans to a bowl of ice water to stop the cooking process.
  • Use a variety of colors of raisins: Golden raisins, black raisins, and red raisins all add different flavors and textures to the dish.
  • Toast the nuts: Toasting the nuts brings out their flavor and makes them more crunchy. You can toast the nuts in a dry skillet over medium heat for 5-7 minutes, or until they are golden brown and fragrant.
  • Use a light hand with the salt and pepper: The raisins and nuts already add a lot of flavor to the dish, so you don't need to add too much salt and pepper.

Conclusion:

Green beans with golden raisins is a simple but delicious side dish that is perfect for any occasion. The combination of sweet raisins, crunchy nuts, and tender green beans is sure to please everyone at the table. This dish is also very easy to make, so it's a great option for busy weeknights.
