Tips:
- Choose fresh, tender green beans: Look for beans that are bright green in color and have no blemishes. Avoid beans that are wilted or have brown spots.
- Trim the green beans: Remove the ends of the beans, where the stem was attached, and any strings that may be present.
- Cook the green beans to your desired tenderness: You can boil, steam, or sauté the green beans, depending on your preference. If you boil the beans, be sure to add a little salt to the water. If you sauté the beans, use a little olive oil or butter and cook them over medium heat until they are tender.
- Make the lemon vinaigrette: Whisk together lemon juice, olive oil, honey, Dijon mustard, salt, and pepper in a small bowl. Taste the vinaigrette and adjust the seasonings as needed.
- Toss the green beans with the vinaigrette: Add the cooked green beans to a large bowl and pour the vinaigrette over them. Toss the beans to coat them evenly.
- Add the almonds: Sprinkle the almonds over the green beans and toss to combine.
- Serve the green beans immediately: Garnish with fresh herbs, such as parsley or cilantro, if desired.
