Cover, bring to a boil over high heat, then reduce heat and simmer, stirring occasionally, until cumin flavor is mellow, about 45 minutes. Discard any large pieces of ancho chile. 5. Stir zucchini into posole and simmer just until tender, about 5 minutes. Stir in more broth if you'd like a thinner soup. 6. Ladle posole into bowls and serve with remaining pumpkin seeds and oregano and other accompaniments to taste.

Tips:

  • Use dried posole: Dried posole has a more intense flavor than canned posole and it cooks up more tender. If you're using dried posole, be sure to soak it in water overnight before cooking.
  • Use a variety of chiles: This will give your posole a more complex flavor. Some good options include New Mexico chiles, ancho chiles, and guajillo chiles.
  • Roast the chiles before using them: Roasting the chiles will bring out their flavor and make them easier to blend.
  • Use fresh hominy: Fresh hominy has a sweeter, more delicate flavor than canned hominy. If you can find it, use fresh hominy in your posole.
  • Add toppings: Top your posole with your favorite toppings, such as shredded chicken, avocado, sour cream, and cilantro.

Conclusion:

Posole is a delicious and versatile dish that can be enjoyed by people of all ages. It's perfect for a casual meal with friends or family, or for a special occasion. With so many different variations to choose from, there's sure to be a posole recipe that everyone will enjoy.
