1 cup couscous
3/4 cup boiling water or vegetable stock
1 tablespoon olive oil
1 small onion, thinly sliced
1/2 teaspoon fine sea salt
1/4 teaspoon ground cumin
Herb Paste
1/2 cup unsalted pistachios, toasted and coarsely chopped
3 scallions, finely sliced
1 fresh green chile, such as jalapeno, finely sliced
1 1/2 cups arugula leaves, chopped

Steps:

  • Place couscous in a large bowl and add boiling water or stock. Cover bowl with plastic wrap and let stand for 10 minutes.
  • Meanwhile, heat olive oil over medium heat and add onion; cook, stirring, until golden and soft. Add salt and cumin; stir to combine. Remove from heat and let cool slightly.
  • Uncover couscous and stir in herb paste, using a fork to fluff. Add onion mixture, pistachios, scallions, chile, and arugula; gently mix to combine. Serve at room temperature.

2 teaspoons olive oil
1/2 cup onion, chopped
1 green bell pepper, seeded and coarsely chopped
2 garlic cloves, minced
1 jalapeno pepper, seeded and minced
1 tablespoon dried oregano
1 bay leaf
2 tablespoons chili powder
2 teaspoons salt
1 (28 ounce) can diced tomatoes
2 (14 ounce) cans vegetable broth or 2 (14 ounce) cans water
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can red kidney beans, rinsed and drained
1/4 cup uncooked whole wheat couscous

Steps:

  • Heat oil in an large stockpot over medium heat. Add onion, green pepper, garlic and jalapeno and saute 2 minutes.
  • Add herbs and spices and salt.
  • Stir well to coat vegetables.
  • Add tomatoes, broth and beans and bring mixture to a boil.
  • Reduce heat and simmer, uncovered, for 3 minutes.
  • Add couscous and simmer, uncovered, 5 minutes.
  • Discard bay leaf.
  • Ladle chili into boals and top with your favorite toppings.

1 tablespoon extra-virgin olive oil
4 scallions, finely chopped
Salt and freshly ground black pepper
1 1/2 cups chicken or vegetable stock
1 single-serve bag green tea
2 tablespoons honey
1 1/2 cups couscous
1/2 cup finely chopped mint leaves, a couple of handfuls
1/2 seedless cucumber, peeled and chopped
1 lemon, juiced
1 lime, juiced

Steps:

  • Heat the olive oil in sauce pot over medium heat and add the scallions. Season with salt and pepper and saute 2 to 3 minutes. Add stock and bring to a boil, secure tea bag to handle of the pot, and let steep for 1 minute. Remove the tea bag, stir in honey and couscous. Turn off the heat, stir in mint, and cover the pot. Let couscous stand 5 minutes, then fluff with fork and transfer to a serving bowl. Add the cucumber and lemon and lime juice. Season with salt and pepper, to taste, toss to combine and serve.

2 tablespoons canola oil
3/4 cup finely diced Spanish onion
1/2 large jalapeno, seeded and minced
1 clove garlic, chopped
4 tablespoons flour
1 (27-ounce) can roasted green chiles, chopped, juices reserved
1/2 cup white vinegar
2 teaspoons sea salt
1 teaspoon fresh cracked black pepper
2 tablespoons fresh lime juice

Steps:

  • In a small Dutch oven over medium-high heat, add the oil. When hot, add the onions and jalapeno and saute until just starting to caramelize, 4 to 5 minutes. Add the garlic and cook 1 minute more.
  • Reduce the heat to medium, sprinkle the onion mixture with the flour and stir constantly until lightly browned, about 2 minutes. Add the reserved liquid from the chiles, 1 cup water, the vinegar and salt and stir until the liquid is smooth and all the flour is dissolved.
  • Add the chiles and pepper and simmer for 5 to 6 minutes. Puree in a blender, or with a stick blender, and add the lime juice. Adjust to taste for salt and pepper. Refrigerate for up to 1 week.

2 lbs boneless pork, cubed,fat trimmed
2 large onions, chopped
2 cans chopped green chilies
2 jalapenos, minced
4 cloves garlic, mashed
1 tablespoon cumin seed, crushed
1 tablespoon ground cumin
2 teaspoons oregano
1/2 teaspoon thyme
1/2 cup chopped cilantro
2 (16 ounce) cans white beans, do not drain (navy, cannelini, etc)
3 tablespoons chili powder
2 tablespoons red wine vinegar
salt and pepper
2 beef double bouillon cubes (knorr)
1 1/2 quarts water
2 -3 tablespoons olive oil

Steps:

  • In a fairly large soup pot, heat olive oil.
  • Sautee garlic until golden, then add onion.
  • Sautee until it begins to become translucent, then add pork.
  • Salt and pepper to taste.
  • Cook over fairly high heat, until pork browns, then add cumin, lower heat to medium, and cook meat through.
  • Add all remaining ingredients.
  • Bring to a boil, and let boil 10 minutes or so, then cover, and reduce heat to low.
  • Cook at least 1 hour on low, and up to 3, depending on how thick you like your chili, stirring occasionally.
  • Serve with grated colby-jack cheese and a big dollop of sour cream, chopped green onions or cilantro, and tortilla chips!
  • Note:Any other kind of meat could easily be substituted--chicken, turkey, beef, whatever appeals to you!

My version of my mother's green chili. I like to serve it over oven-baked burritos or with beans and rice. If you can't find a chile roaster, look for frozen diced chiles at your supermarket. You can also freeze fresh roasted chiles for off-season use.

1 tablespoon olive oil
1 ½ pounds cubed pork stew meat
salt and pepper to taste
1 large yellow onion, diced
4 cloves garlic, minced
2 cups chopped, roasted green chiles
1 (14.5 ounce) can diced tomatoes with juice
1 ½ cups tomatillo salsa
5 cups chicken broth
½ teaspoon dried oregano
1 pinch ground cloves

Steps:

  • Heat the olive oil in a Dutch oven or large pot over medium-high heat. Season the pork with salt and pepper to taste, then place into the hot oil. Cook until golden brown on all sides, about 7 minutes. Once browned, remove the pork and set aside. Reduce heat to medium, and stir in the onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Return the pork to the pot, and stir in the green chiles, diced tomatoes with juice, tomatillo salsa, and chicken broth. Season with oregano and clove. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer 20 minutes.
  • After 20 minutes, remove 2 cups of the soup (ensure there are no pork cubes in it), and pour into a blender. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree until smooth, then pour back into the cooking pot. This will create a thicker texture for your chili and will eliminate some of the chunky bits of chiles. Continue to simmer, stirring occasionally until the pork is very tender, at least 35 minutes more.
