2 cups iceberg lettuce, torn in bite sized pieces
1 green onion, finely chopped
2 celery ribs, chopped
1/2 cup pomegranate seeds
1/2 cup chopped mandarin orange section
1/2 cup light oil-and-vinegar dressing (or as needed)
1/4 cup balsamic vinegar

Steps:

  • Mix all greens together in a large salad bowl, adding more lettuce if need be.
  • Add pomegranate seeds and mandarin orange pieces.
  • Mix in enough oil and vinegar salad dressing to taste, drizzle with balsamic vinegar.

1 clove garlic, minced
2 teaspoons balsamic vinegar
Salt and pepper
1/2 cup extra-virgin olive oil
1 bunch curly kale, stems removed, leaves torn
3 tangerines, separated into segments
3/4 cup walnuts
1/4 cup pomegranate seeds

Steps:

  • Whisk together the tangerine juice, garlic and balsamic vinegar in a bowl. Add salt and pepper to taste. Slowly stream in the olive oil while whisking.
  • In a large bowl, combine the kale, tangerine segments and walnuts. Toss with some dressing and season with salt.
