A note from my mother: I put a heaping teaspoon of tapioca on the bottom crust before I fill it. It will absorb some of the liquid.

2 cups chopped green tomato
2 cups peeled and chopped tart green apples
1 cup firmly packed brown sugar
½ cup chopped raisins
3 tablespoons cider vinegar
1 tablespoon butter
1 teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
1 pastry for a 9-inch double-crust pie

Steps:

  • Combine tomatoes, apples, brown sugar, raisins, vinegar, butter, cinnamon, salt, nutmeg, and cloves together in a large saucepan; cook and stir over medium-low heat until bubbling and slightly reduced in volume, about 25 minutes. Remove saucepan from heat and cool slightly, about 15 minutes.
  • Preheat oven to 450 degrees F (230 degrees C). Press 1 pie crust into a 9-inch pie dish.
  • Pour green tomato filling into the pie crust; top with the second pie crust, crimping the edges together to seal.
  • Bake in the preheated oven for 15 minutes. Decrease oven temperature to 375 degrees F (190 degrees C) and continue baking until golden brown, 20 to 25 minutes.

8 quarts green tomatoes, minced
8 quarts minced, cored apples
½ pound beef suet
6 pounds brown sugar
1 cup distilled white vinegar
2 tablespoons salt
2 tablespoons ground cinnamon
2 tablespoons ground cloves
2 tablespoons ground allspice
2 pounds raisins
32 ounces candied mixed citrus peel
7 large orange, peeled, sectioned, and cut into bite-size
2 lemons, finely chopped

Steps:

  • In a very large stock pot, combine green tomatoes, apples, suet (or oil), brown sugar, vinegar, chopped oranges, chopped lemons, raisins, and candied peel. Season with salt, cinnamon, cloves and allspice. Cover, and cook over low heat for 3 hours.
  • Sterilize 30 (1 pint) canning jars and lids according to manufacturer's instructions.
  • Ladle filling into the sterilized jars, leaving 1/2 inch head space. Wipe the jar with a clean, damp cloth. Cover with jars with lids, and screw on jar rings.
  • Heat water in a hot water canner. Place jars in rack, and slowly lower jars into canner. The water should cover the jars completely, and should be hot but not boiling. Bring water to a boil, and process for 10 minutes.

1 cup currants
1/2 cup vinegar
1 teaspoon lemon, rind of
1 teaspoon orange rind
1 tablespoon cinnamon

1 pinch clove
4 tablespoons margarine
3 cups sugar

Steps:

  • This is the mincemeat I use all the time now.
  • Don't peel tomatoes or apples.
  • Core and chop in processor.
  • Cook everything together slowly for 1 1/2 to 2 hours.
  • Bottle in sterilized jars and hot water process for 25 minutes.

10 large tomato (green)
3 c sugar
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp clove, ground
1 tsp salt
1/4 c apple cider vinegar
1 1/2 pt apples, granny smith (chopped)
1 lb raisins (ground)

Steps:

  • 1. Grind Green Tomatoes, put in strainer and drain off all juice. Grind raisins
  • 2. Measure one pint of ground tomato. Pour into a 10 cup pot.

1 kg granny smith apple, half-peeled, diced
250 g thompson seedless grapes
100 g shredded carrots
165 g chopped dried pears
1/2 cup candied orange peel
1 tablespoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves (omit if freezing, stir in once thawed)
1 teaspoon salt
2 cups brown sugar, firmly packed
2 tablespoons blackstrap molasses
2/3 cup apple cider vinegar
1/4 cup fresh lemon juice
1/4 cup water

Steps:

  • Combine all ingredients in a large stockpot.
  • Bring to a simmer, reduce heat to low and cook, partially covered, 1 hour and 15 minutes, stirring frequently.
  • Can according to water bath canner instructions.

7 cups very green tomatoes, finely chopped
7 cups green apples, finely chopped
1 whole lemon, finely chopped (including rind)
1 cup sultana
1 cup raisins
1 cup currants
4 cups sugar
12 tablespoons molasses
1 1/2 cups apple cider vinegar
1/2 cup brandy (to 3/4 cup)
1 tablespoon cinnamon
1 teaspoon ground cloves
3/4 teaspoon ground allspice
3/4 teaspoon ground nutmeg
1 1/2 teaspoons salt
3/4 teaspoon ground black pepper
1/2 cup butter (can use oleo to keep vegetarian)

Steps:

  • Mix together all ingredients except butter in a deep heavy bottomed pot.
  • Bring to a boil and immediately turn down heat so mixture will bubble gently.
  • Cook uncoverered over med to low heat, stirring regularly to prevent sticking, for 3 hours or until mixture is thick and liquid is absorbed.
  • Pot must be watched and heat lowered if it starts to splatter or if liquid evaporates to quickly.
  • Taste and adjust according to your own tastes -- more brandy, vinegar or sugar.
  • Simmer at least 3 hours.
  • Once mincemeat is cooked down to desired thickness, mix in butter a little bit at a time until well combined.
  • It will can, freeze or store in refrigerator (approx 30 days).

2 qt chopped green tomatoes
2 qt chopped apples
1 lb raisins
1 lb currants
1/2 c butter
1/2 c vinegar
2 c mollasses
5 c brown sugar
2 tsp salt
2 tsp cloves
4 tsp cinnamon
1 tsp nutmeg

Steps:

  • 1. Cover the tomatoes with water, scald and drain.
  • 2. Combine tomatoes with apples, raisins, currants, vinegar, mollasses and spices in a big enamel kettle. Cook all together until thick and dark. This should take about 2 hours.
  • 3. Pour into sterile jars,seal,process in a hot water bath 10 minutes. I have froze this for a year also and it was very good.
  • 4. Makes 8 pints.
