Time 2h50m

Yield 12

Number Of Ingredients 10

1 (.25 ounce) package active dry yeast
2 tablespoons white sugar
1 ½ cups warm water (110 degrees F/45 degrees C)
2 teaspoons salt
2 tablespoons shortening
1 tablespoon minced onions
½ teaspoon dried oregano
3 ½ cups bread flour
½ onion
2 tablespoons butter, melted

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Stir salt, shortening, minced onions, oregano and 2 cups bread flour into yeast mixture. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Stir dough to deflate and place it into a lightly greased 9x5 inch loaf pan. Cover with a damp cloth and let rise until the top of the dough is within 1/2 inch of the top of the pan, about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • After loaf has risen, arrange onion slices on top of the loaf. Pour melted butter over the slices and bake in preheated oven for 35 to 40 minutes, or until golden brown. Remove from pan to cool on a wire rack.

GREYSTON'S POTATO ONION BREAD

Greyston's Potato Onion Bread image

Provided by Molly O'Neill

Time 5h

Yield 2 loaves

Number Of Ingredients 10

1 package dry yeast
1 cup warm water
1 tablespoons honey
2 1/2 tablespoons dry milk powder
2 teaspoons salt
1 tablespoons vegetable oil
1/2 pound potatoes, cooked until very tender, mashed and allowed to cool
3 ounces onion, minced
4 to 4 1/2 cups unbleached flour
1 egg beaten with 2 tablespoons water, for egg wash

Steps:

  • Dissolve the yeast in the warm water and then add the honey, milk powder, salt, oil, potatoes and onion, stirring well. Gradually stir in 1 1/2 cups of flour.
  • Add 2 more cups of the flour, 1/2 cup at a time, until the dough is stiff. Turn onto a lightly floured board and knead in enough flour until the dough is no longer sticky.
  • Continue kneading for about 15 minutes and then place the dough in a lightly oiled bowl. Cover the bowl loosely with plastic wrap and set in a warm place to rise until dough is doubled in volume, about 1 1/2 hours. Remove dough from bowl, punch it down and shape into a ball. Return to bowl, cover with plastic wrap and let rise for 40 minutes.
  • Preheat the oven to 350 degrees. Punch down the dough again and turn onto a lightly floured board . Divide the dough in half and knead one piece, adding about 1/4 cup or more of flour to make the dough stiff enough to hold a round shape.
  • Form a ball and then fold the dough inward while rotating it against the board to form a mushroom cap. Repeat this rotation 10 times. Lay the ball of dough on its side and roll and press the dough against the board about 10 times, continuing to keep the round shape. Repeat with the other ball.
  • Place both balls on a buttered baking sheet and let them rise in a warm place, lightly covered with plastic wrap, for about 25 minutes. Brush the loaves with egg wash and make 2 quarter-inch-deep slashes to form a cross in each.
  • Bake for 35 to 40 minutes, until the loaves are golden and produce a hollow sound when tapped on the bottom. Cool at least 1 hour before slicing.

Golden potatoes & onions image

This is a brilliant way to use up leftover potatoes, perfect with roast chicken

Provided by Good Food team

Categories     Dinner, Side dish

Time 50m

Number Of Ingredients 7

25g butter
4 onions , halved and finely sliced
few sprigs thyme
4 bay leaves
2 tbsp olive oil
600g cooked new potatoes , cooled and thickly sliced
large handful flat-leaf parsley leaves, chopped finely, but not pummelled

Steps:

  • Heat the butter in a shallow pan and cook the onions with the thyme and bay for 20 mins until very soft, then turn up the heat to medium and cook for 5 mins more until sticky and golden.
  • Add the olive oil to the pan, scatter in the potatoes and fry for about 10 mins until golden. They won't crisp because of the onions but you want them soft around the edges; add more oil to the pan if necessary. About 30 secs before serving toss through the parsley and season.

Tips:

  • Prep your Potatoes Right: Russets are ideal for this bread. Bake, cool, and peel them beforehand. Ensure they're cold before grating so they don't release excess moisture.
  • Perfectly Caramelized Onions: Cook the onions low and slow with butter or oil until they're golden brown and soft but not burnt. This step adds rich flavor and texture to the bread.
  • Use Fresh Herbs: Incorporate chopped fresh herbs like parsley or chives to enhance the bread's flavor profile. They add a vibrant pop of color and freshness.
  • Don't Overwork the Dough: Mix the dough until just combined. Overworking can result in a dense, chewy bread. A slightly sticky dough is ideal.
  • Score the Top: Before baking, score the top of the loaf with a sharp knife to help it rise evenly and create a beautiful crust.
  • Let it Cool Before Slicing: Resist the urge to slice into the bread immediately. Allow it to cool for at least 10-15 minutes. This ensures cleaner slices and prevents the bread from crumbling.

Conclusion:

Greyston's Potato Onion Bread, inspired by the famous Greyston Bakery in Yonkers, New York, is a symphony of flavors and textures.
