Steps:
- Preheat a grill pan over medium-high heat. Slice ciabatta in half lengthwise. Then cut each half into 1-inch slices. In batches as needed, grill the ciabatta slices, cut side down until they are golden and crisp, about 2 minutes. Working quickly, drizzle the toasted sides with extra-virgin olive oil. Rub the garlic cloves over the grilled bread, then rub the cut side of the tomatoes over the grilled bread. It's important to do this while the bread is still hot or warm, otherwise the garlic won't melt into the bread. Sprinkle with salt and pepper, and serve warm.

GRILLED GARLIC BREAD
A quick and easy, but delicious side for summer dinners. Hot, smoky garlic bread is equally friendly to a juicy steak, a whole fish or a Caprese salad. Any loaf that is not too thick can be used, but whole grain stands up better to the oil-garlic-fire treatment. You may doubt that using garlic cloves with the papery skins on will work, but the rough surface of the toasted bread rubs them right off.

Steps:
- Cut bread in half lengthwise, and cut in half crosswise if very long. Brush cut surfaces of bread lightly with olive oil. Under a broiler or on a grill, toast bread, turning a few times, until cut surfaces are golden brown. (If using a broiler, you can place bread directly on the oven rack.)
- Remove bread to a work surface, grab a garlic clove with your fingertips and rub it lightly over the cut surfaces of the bread. (The papery skin of the garlic will come off.) When the bread is well scented with garlic, brush again with olive oil and toast again. If using tomato, rub the cut surfaces against the bread so the bread absorbs the juice. Oil and toast bread one last time, until golden and charred. Sprinkle lightly with salt and serve immediately.

Tips:
- For the best flavor, use high-quality olive oil. Extra virgin olive oil is a good choice.
- Use fresh garlic cloves. Jarred garlic can be used, but it will not have as much flavor.
- Be careful not to burn the garlic. If it starts to brown, remove it from the heat immediately.
- Use a sturdy bread that can hold up to the grilling process. A baguette or ciabatta bread works well.
- Slice the bread into thick slices so that they don't fall apart on the grill.
- Brush the bread with olive oil before grilling. This will help it to toast evenly.
- Grill the bread over medium heat until it is golden brown and crispy.
- Serve the grilled bread immediately with your favorite toppings. Some popular toppings include olive oil, garlic, salt, pepper, tomatoes, basil, and cheese.
Conclusion:
Grilled bread with olive oil, garlic, and salt is a simple but delicious dish that can be enjoyed as an appetizer, snack, or side dish. It is also a great way to use up leftover bread. With its crispy texture and flavorful toppings, grilled bread is sure to be a hit with everyone at your next gathering.
