1 ½ cups peaches, sliced
3 tablespoons bourbon
1 tablespoon brown sugar
½ cup less sodium chicken broth
2 fresh thyme sprigs
1 clove garlic, minced
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon fresh thyme, dried
1 tablespoon oregano, dried
½ teaspoon celery salt
½ teaspoon salt
¼ teaspoon cayenne
4 pork chops, bone-in
2 tablespoons canola oil

Steps:

  • Bourbon Peach Sauce:
  • In a small sauce pan on medium heat, melt the butter and sauté the peaches for 2 minutes.

1/4 cup sugar
2 cups water
2 cups ice water
4 center-cut pork rib chops (1 inch thick and 8 ounces each)

BASIC RUB:
3 tablespoons paprika
1 teaspoon each garlic powder, onion powder, ground cumin and ground mustard
1 teaspoon coarsely ground pepper
1/2 teaspoon ground chipotle pepper

Steps:

  • In a large saucepan, combine salt, sugar and 2 cups water; cook and stir over medium heat until salt and sugar are dissolved. Remove from heat. Add 2 cups ice water to cool brine to room temperature., Place pork chops in a large resealable plastic bag; add cooled brine. Seal bag, pressing out as much air as possible; turn to coat chops. Place in a 13x9-in. baking dish. Refrigerate 8-12 hours., Remove chops from brine; rinse and pat dry. Discard brine. Brush both sides of chops with oil. I had some chops and didn't really know what I wanted to do with them.So after looking through alot and I mean ALOT :) of chop recipes.I still couldn't find anything to strike my fancy, so I came up with this.If you try this recipe, please feel free to change the amount of cajun seasoning to meet your household's taste. The "ZAAR" database wouldn't let me put in the thickness of the chops the thickness is 1/2 inch. If desired sprinkle more cajun seasing over chops before frying. Chill time is included in prep time.Submitted to "ZAAR" on November 5th,2008.

3/4 cup buttermilk
1 teaspoon cajun seasoning
1 cup self-rising flour
2 teaspoons cajun seasoning
