GRILLED CHEESE & TOMATO SANDWICH
I started liking grilled cheese & tomato sandwiches years ago at a little restaurant near my office. I would go about three times a week to order a grilled provolone cheese & tomato sandwich. Today I wanted something different, something a little spicier, so I made up the following recipe. I thought it was delicious! Hope you try it and enjoy it!

AVOCADO-TOMATO GRILLED CHEESE SANDWICH
I LOVE avocados, especially the black Haas avocados. They're creamy and have such a "buttery" taste, and yet are cholesterol-free. This recipe makes a really delicious sandwich. When I make it for the kids, I eliminate the cumin, but add it when I'm making a sandwich for myself -- I like cumin's very mild spicy flavor that has a hint of caraway in it.

Tips for Making the Best Grilled Cheese Tomato Sandwich:
- Use high-quality ingredients. The better the ingredients, the better the sandwich will be. Look for fresh, ripe tomatoes, a flavorful cheese that melts well, and a good quality bread that can stand up to the heat of the grill.
- Slice the tomatoes thinly. This will help them cook evenly and prevent them from making the sandwich too soggy.
- Use a variety of cheeses. For a classic grilled cheese, cheddar or American cheese are both good choices. But you can also get creative and use other types of cheese, such as mozzarella, provolone, or fontina.
- Don't overcrowd the pan. If you're grilling multiple sandwiches, make sure to leave enough space between them so that they can cook evenly.
- Cook the sandwich over medium heat. This will help the cheese melt slowly and evenly without burning the bread.
- Flip the sandwich halfway through cooking. This will ensure that both sides are cooked evenly.
- Serve the sandwich immediately. Grilled cheese sandwiches are best when served hot and gooey.
Conclusion:
The grilled cheese tomato sandwich is a simple yet delicious classic. With just a few simple ingredients, you can create a sandwich that is perfect for a quick lunch or dinner. So next time you're looking for something quick and easy to eat, give the grilled cheese tomato sandwich a try. You won't be disappointed.
