5 tablespoons fresh lime juice
2 garlic cloves, minced
Coarse salt and ground pepper
4 boneless, skinless chicken breast halves, (6 to 8 ounces each)
1/2 small red onion, quartered
1/2 jalapeno pepper, ribs and seeds removed, roughly chopped
8 ounces tomatillos (about 4), peeled, rinsed, cored, and quartered
1 cup grape tomatoes, halved or quartered if large
1/2 cup whole cilantro leaves

Steps:

  • Heat grill to medium; lightly oil grates. In a shallow dish, stir together 2 tablespoons lime juice and garlic; season with salt and pepper. Add chicken and coat. Let sit 15 minutes.
  • In the bowl of a food processor, pulse onion and jalapeno until finely chopped. Add tomatillos and pulse once or twice. Fold in tomatoes, cilantro, and remaining lime juice; season with salt and pepper.
  • Grill chicken, covered, until opaque throughout, about 10 minutes per side. Transfer to a plate and tent with aluminum foil; let rest 5 minutes. Serve chicken with salsa.

1 can (15.5 ounces) red kidney beans, undrained
1/2 cup low-sodium chicken broth
12 ounces tomatillos, husked, rinsed, and dried
1/2 medium white onion, cut into 4 wedges
3 cloves garlic, peeled
2 jalapenos, stems removed
1 bunch cilantro
1/4 cup low-sodium chicken broth
1 tablespoon fresh lime juice, plus wedges for serving

Steps:

  • Smashed Kidney Beans: Heat oil in a saucepan over medium-high. Add onion; cook until translucent, about 4 minutes. Add coriander, chipotle in adobo, and 1/2 teaspoon salt; cook 30 seconds more. Add cinnamon, beans with liquid, and broth; bring to a boil and cook, stirring occasionally, until reduced and thickened slightly, about 5 minutes more. Remove from heat.
  • Smash beans with a fork or potato masher until creamy and spreadable, leaving some intact. Let cool slightly, then transfer to a blender with 1 cup packed cilantro leaves and stems, broth, lime juice, and 3/4 teaspoon salt. Puree until smooth.
  • Season chicken with salt and pepper. Return skillet to medium-high heat; swirl in oil. Add chicken in a single layer and cook, flipping once, until golden brown in places but not cooked through, about 3 minutes. 4 large corn tortillas

1 whole boneless, skinless chicken breast, pounded flat and thin
1 clove garlic, chopped
1 teaspoon oregano
1 teaspoon chili powder
Juice of a lime
1 tablespoon olive oil
1 tablespoon vegetable oil
1/2 onion, finely chopped
1 can black, pinto or red beans, drained and rinsed
1/4 cup water
Shredded lettuce
Chopped tomatoes
Chopped red onion
1 cup grated Monterey jack
Cilantro leaves
1/2 cup salsa
3/4 cup sour cream

Steps:

  • In a large skillet heat oil over medium high heat. Carefully place corn tortilla in hot oil and fry until crisp, flipping the tortilla once. Remove to a paper towel to drain. Season with salt. Cook off remaining tortillas.
  • In a glass dish combine chicken, garlic, lime juice, chili powder, oregano and olive oil. Let chicken marinate for 15 minutes.
  • Heat oil in a heavy saucepan and cook onions until tender. Add beans and water and bring to a simmer. Stir beans and stir occasionally. Beans are done when they begin to clump together in one mass. Season with salt and pepper.
  • Heat grill, broiler or cast iron grill pan and cook chicken breasts for 4 minutes per side or until cooked through. Slice chicken in thin slices and keep warm. 1 serrano pepper, seeded and minced

1/4 cup freshly squeezed lime juice
1/4 cup extra-virgin olive oil, plus more for brushing
1 teaspoon coarse salt, plus more for seasoning
1/4 teaspoon freshly ground pepper, plus more for seasoning
2 red onions, sliced into 1/2-inch-thick rounds
Chopped lettuce, sliced tomatoes and avocados, fresh cilantro, and sour cream, for serving

Steps:

I've served it on rice as well as in tortillas. It can be made ahead to reheat, and has contemporary feel in its fresh flavors. I like to use skinned, deboned chicken thighs, although Mr. Raichlen uses breasts.

1 lb tomatillo, husked
1 1/2 lbs skinless chicken, cut in approximately 2 inch diameter pieces
kosher salt
fresh ground black pepper
1 -2 tablespoon olive oil
1/2 cup onion, chopped
4 scallions, chopped
1 seeded minced jalapeno
1 -2 tablespoon fresh lime juice
1/2-1 teaspoon sugar
1/4-1/2 cup chopped fresh cilantro

Steps:

  • Roast husked, rinsed tomatillos in a cast iron skillet over medium heat until browned on all sides and soft (about 8-10 minutes)- use tongs to turn.
  • Transfer tomatillos to food processor and coarsely grind.

  • Saute onions, scallions and jalapeno in olive oil until soft- approximately 4 minutes.

Cleanup is a breeze -just throw the foil away!

1/4 teaspoon cumin seed
1/2 medium onion, halved and sliced

4 tablespoons sour cream
8 flour tortillas

Steps:

  • Line baking tray with aluminum foil.
