cooked rice

Steps:

  • Put the orange juice, peanut butter and curry powder in blender container; blend until smooth.
  • Place the chicken strips in a medium bowl, pour the orange juice mixture all and stir to combine.
  • Cover the chicken and place in refrigerator for 1 hour.
  • Remove the chicken from the marinade; discarding marinade,.

  • Grill the Chicken: Grill the chicken breasts over direct heat, skin side down, for 4-5 minutes. Flip and continue grilling for an additional 4-5 minutes, or until the internal temperature reaches 165°F (74°C).
  • Cook the Peanut Glaze: While the chicken grills, prepare the peanut glaze by combining peanut butter, soy sauce, honey, lime juice, garlic, and ginger in a saucepan over medium heat. Bring to a boil, then reduce heat and simmer for 5-7 minutes, stirring occasionally.
  • Glaze and Serve: Once the chicken is cooked, brush it generously with the peanut glaze. Continue grilling for an additional 1-2 minutes per side, or until the glaze is caramelized and slightly charred. Serve hot with rice, vegetables, or your favorite sides.
