8 skinless, boneless chicken breast halves
1 pinch salt and ground black pepper to taste
2 cups peach preserves
3 tablespoons extra-virgin olive oil
2 tablespoons soy sauce
1 tablespoon finely chopped garlic
1 tablespoon Dijon mustard
4 ripe peaches, halved and pitted

Steps:

  • Preheat grill for medium heat and lightly oil the grate. Season chicken breast halves with salt and black pepper.
  • Stir peach preserves, olive oil, soy sauce, garlic, and mustard in a bowl; season with salt and black pepper. Reserve about 1/2 cup peach sauce.

2 tablespoons cornstarch
1 cup water
2 tablespoons peach or orange gelatin
1 medium peach, peeled and finely chopped
4 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a small saucepan, combine sugar, cornstarch and water until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes. Remove from heat. 2 dried ancho chili peppers
3 peaches, peeled, pitted, and sliced, plus more to garnish
2 Tbsp (30 mL) tomato paste
2 Tbsp (30 mL) cider vinegar
1 shallot, chopped
2 garlic cloves, minced, or garlic powder
1 Tbsp (15 mL) honey
1 Tbsp (15 mL) Worcestershire sauce
1/2 tsp (2 mL) ground allspice
1/4 tsp (1 mL) black pepper
1/4 tsp (1 mL) salt
1 1/2 lbs (750 g) boneless, skinless organic chicken thighs
Grapeseed oil, salt, and pepper, for seasoning chicken
Fresh steamed vegetables, such as green beans, to serve
Italian parsley, chopped, to garnish

Steps:

  • Heat heavy skillet over medium-high heat. Add dried chili peppers to pan and toast for about 30 seconds per side, being very careful not to scorch peppers. Slice tops off toasted dried chili peppers and pour out seeds. Reserve seeds. Place peppers in bowl, cover with hot water, and let soak for about 15 minutes.
  • Drain peppers and place them in blender or food processor along with 1 tsp (5 mL) reserved pepper seeds, peaches, tomato paste, vinegar, shallot, garlic, honey, Worcestershire sauce, allspice, black pepper, and salt. Blend until smooth. Taste and blend in more pepper seeds if a hotter sauce is desired. Place some sauce in separate bowl for brushing on uncooked chicken.
  • Preheat grill to medium-high. Brush chicken thighs with oil and season lightly with salt and pepper. Place chicken on greased grill grate and heat, with lid down, for 5 minutes. Brush tops with sauce, flip chicken, brush more sauce on grilled sides of chicken, and continue grilling until an instant-read thermometer inserted into the thickest parts registers 165 F (75 C), about 4 to 5 minutes more. Remove from heat and brush on more sauce if desired.
  • Serve with fresh steamed green beans, and garnish with a sliced peach and chopped parsley.

2 tablespoons vegetable oil, plus more for the grill
2 chicken halves (4 to 5 pounds total)
Kosher salt and freshly ground black pepper
1/2 medium onion, chopped
1 tablespoon chili powder
1/4 cup ketchup
3 tablespoons peach preserves
1/4 cup chopped dill pickles

Steps:

  • For the iced tea: Pour 4 cups boiling water over teabags in a heatproof pitcher and allow to brew, 3 to 5 minutes. Remove teabags and add sweetener to taste. Stir in 6 cups ice cubes until melted. Keep refrigerated until ready to use. Makes two quarts. 1/2 cup chopped white onion (from about 1/2 small onion)
1/4 cup apple cider vinegar
1/4 cup ketchup
1/4 cup soy sauce

1 tablespoon paprika
2 peaches, sliced in half and pits removed
4 skinless chicken breasts
Kosher salt and freshly cracked black pepper
1 medium sweet potato, thinly sliced
Olive oil, for drizzling
Tomato Cucumber Salad, recipe follows
Lime wedges, for serving
1 pound heirloom tomatoes, cored and chopped
1/2 medium English cucumber, seeded and chopped
1/4 cup thinly sliced red onion
2 tablespoons avocado oil
1 teaspoon minced fresh ginger
1 clove garlic, minced
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon ground turmeric
Juice of 1/2 lime

Steps:

  • Heat the oil in a small skillet over medium heat, then add the onions and caramelize, stirring occasionally, until soft and deeply golden brown, 10 to 15 minutes. Deglaze with the cider vinegar and reduce by about half, 3 to 5 minutes. Whisk in the ketchup, soy sauce, brown sugar and paprika, then bring to a boil and let simmer for 5 minutes. Remove from the heat and let cool.
  • Meanwhile, preheat a grill or a grill pan over medium-high heat. Lightly oil the grill grates, then grill the peaches, flipping once, until they get a nice dark char and are soft, 3 to 4 minutes per side.
  • Place the cooled onion mixture and grilled peaches in a blender. Puree until smooth.
  • Sprinkle chicken breasts with salt and pepper. Place chicken on the hot grill and cook for approximately 5 minutes; flip chicken and coat grilled side of chicken with the peach BBQ sauce. Allow chicken to cook for another 5 minutes, then flip again, coating with more peach BBQ sauce.
  • Cook chicken until it reaches an internal temperature of 165 degrees F, another 4 to 5 minutes on each side.
  • Meanwhile, toss the sweet potato slices in a bowl with olive oil and salt and pepper to taste. Grill, flipping once, until nicely charred and tender, 3 to 5 minutes per side.

  • For the peach barbecue sauce: Combine the peaches, peach nectar, ketchup, molasses, vinegar, mustard, Worcestershire sauce and adobo sauce in a deep saucepan. Bring to a boil over medium heat.   • For the BBQ chicken: Prepare a grill for indirect cooking over medium heat.

1 cup Italian salad dressing
4 (8 ounce) bone-in chicken legs with skin
hickory wood chips as needed

Steps:

  • Mix barbecue sauce and salad dressing together.
  • Put chicken legs in a large zip-top bag and pour sauce all over them. Squeeze out the excess air and seal the bag. Massage marinade into the chicken a bit, then refrigerate for 4 hours.
  • Remove chicken from the refrigerator; set bag on the counter and bring to room temperature, about 1 hour.
  • Preheat an outdoor grill for medium-low heat and lightly oil the grate. Load a smoker box with wood chips and set on the grate.
