GRILLED TUNA
Tuna is available most of the year, so fresh steaks should be easy to come by. Be choosy: a reddish color is acceptable, but flesh with dark spots or streaks should be avoided. As with all great ocean fish, the flesh tends to be dry. Marinate with oil, and avoid overcooking. The timing is critical, as tuna should be served medium rare. Use a kitchen timer.

Steps:
- Combine all ingredients except for tuna in a medium mixing bowl.
- Place tuna in sauce mixture.
- Marinate for 2-3 hours.
- Grill tuna over medium coals for 10 minutes or until cooked throughout, turning once.
Tips:
- Choose the right tuna steaks. Look for steaks that are about 1 inch thick and have a good amount of marbling. This will help ensure that the tuna is cooked evenly and stays moist.
- Marinate the tuna. Marinating the tuna in a mixture of olive oil, citrus juice, and herbs will help to infuse it with flavor and keep it moist during cooking.
- Grill the tuna over medium heat. This will help to prevent the tuna from overcooking and becoming dry.
- Cook the tuna to your desired doneness. The best way to check the doneness of tuna is to use a meat thermometer. The tuna is cooked medium-rare when the internal temperature reaches 125 degrees Fahrenheit, medium when it reaches 135 degrees Fahrenheit, and well-done when it reaches 145 degrees Fahrenheit.
- Let the tuna rest before serving. This will allow the juices to redistribute throughout the fish, resulting in a more tender and flavorful bite.
Conclusion:
Grilled citrus tuna is a delicious and healthy meal that can be enjoyed by people of all ages. It is a great source of protein, omega-3 fatty acids, and vitamins and minerals. By following the tips above, you can easily grill citrus tuna that is perfectly cooked and full of flavor.
