MEXICAN CORN-OFF-THE-COB SALAD

Mexican Corn-off-the-Cob Salad image

This salad was inspired by the recipes I've seen for grilled Mexican corn on the cob--mayo, lime, cotija cheese--just adjusted for those that would rather not eat corn on the cob or to save time (and grill space) during your bbq! Can be served cold or at room temp.

Tips:

  • Choose fresh, sweet corn: Look for corn with bright green husks and plump kernels. Avoid corn that has dry or brown husks, as this indicates that it is old and will not be as flavorful.
  • Grill the corn over medium-high heat: This will help to char the kernels slightly and give them a smoky flavor.
  • Rotate the corn frequently: This will help to ensure that the corn cooks evenly and does not burn.
  • Use a sharp knife to cut the corn off the cob: This will help to prevent the kernels from becoming mushy.
  • Add the dressing to the corn while it is still warm: This will help the flavors to meld together.
  • Serve the corn salad immediately: This is when it will be at its best flavor.

Conclusion:

Grilled corn salad is a delicious and easy-to-make summer side dish. It is perfect for picnics, potlucks, and barbecues. The combination of sweet corn, tangy lime, spicy red chili, and creamy cotija cheese is sure to please everyone at the table. So next time you are looking for a quick and easy side dish, give this grilled corn salad a try. You won't be disappointed!
