½ cup Burgundy wine
¼ cup barbeque sauce, plus more for basting
¼ cup cider vinegar
¼ cup hot pepper sauce
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow mustard
4 pounds country-style pork ribs
1 tablespoon onion powder
1 tablespoon garlic powder

Steps:

  • Stir wine, barbeque sauce, cider vinegar, hot pepper sauce, Worcestershire sauce, and mustard together in bowl until well mixed. Place ribs in a baking dish; pour Burgundy wine mixture over ribs and coat completely.
  • Mix onion powder and garlic powder together in a bowl. Dust ribs with powder mixture; let marinate 2 hours, turning once.
  • Preheat grill for medium-low heat and lightly oil the grate.
  • Grill ribs, covered, over indirect heat on the preheated grill for 45 minutes, turning once. Baste with barbeque sauce and grill until meat is tender, about 15 minutes, turning and basting frequently.

3-4 country style ribs (boneless)
1 cup italian dressing
3 slices fresh ripe pineapple
1/4 cup chopped fresh cilantro
1/4 cup diced red onion
1 tbsp fresh lime juice
1 tsp lime zest
2 tsp minced serrano or jalepeño pepper
1 clove garlic, finely chopped
2 tbsp olive oil

Steps:

  • Marinate ribs in a large plastic zip bag with the italian dressing for at least one hour. Preheat grill to approximately 400. Slice the lower 2 inches off the fresh pineapple, slice off from remaining fruit three 1/2" slices. Core/skin them, then grill for approx. 5 minutes per side. Some charring is ok, but don't burn them. Remove from the grill, dice, and place in a bowl with remaining ingredients. Watch the cilantro, as a little goes a long way! Remove ribs from marinade and remove excess from the meat. Grill at least 5-7 minutes per side until done (use thermometer, as they are usually pretty thick). Arrange on a plate and spoon on liberal amounts of salsa. Side note: Try serving with rice pilaf or country style smashed potatoes (skin on). You may vary the heat and associated flavor from the peppers by experimenting with different varieties.

3 cloves garlic, roughly chopped
1 jalapeño, stemmed, seeded, and roughly chopped
4 scallions, white and green parts, chopped
One 7-ounce can chipotle chiles in adobo sauce
3 tablespoons roughly chopped fresh oregano
1 tablespoon kosher salt, plus more to taste
1 1/2 cups red wine vinegar
1 cup pure olive oil
4 pounds country pork ribs
Freshly ground black pepper to taste

Steps:

  • Combine the garlic, jalapeño, scallions, chipotles, oregano, and salt in a food processor and mix until relatively smooth. While the processor is running, gradually pour in the vinegar and then the oil. Transfer this marinade to a bowl.
  • Season the ribs with salt and pepper. Put them in a large resealable plastic bag, pour 2 cups of the marinade over them, and refrigerate overnight. Cover and refrigerate the remaining marinade.
  • Prepare a medium-hot fire in a grill.
  • Remove the ribs from the bag, shake off the excess marinade, and place on the grill. Grill for 15 to 20 minutes, basting with the reserved marinade and flipping them frequently so that they cook evenly. Serve.

1/3 cup Worcestershire sauce
1 1/2 ounces soy sauce
2 tablespoons inglehoffer original stone ground mustard
1/4 cup kc masterpeice original barbecue sauce
2 lbs country-style pork ribs

Steps:

  • Wisk together the Brown Sugar, Pepper, Garlic Powder, Onion Powder, Water, Worcesteshire Sauce and Soy Sauce. Then wisk in the Mustard. Reserve 1/4 cup of the marinade.
  • Trim the pork ribs and place in a sealable plastic bag in a large bowl.
  • Pour in the marinade remove the excess air and seal the bag. Let the ribs marinade at room temerature for 30 minutes.
  • Heat up the grill and clean the grates.
  • Mix the reserve marinade with the barbecue sauce.
  • Remove the meat from the marinade and discard the remaining marinade.
  • Brush the meat with the marinade & Barbecue sauce and grill over direct high heat with the grill covered turning every 10-15 minutes. When meat temp reaches 155° remove from grill and enjoy.

PINEAPPLE GRILLED BBQ RIBS

This was my 1st attempt at making ribs years ago, and is still my most requested recipe with family and friends. And, it works great with Baby backs, Spares, and St. Louie's (I prefer the St. Louis). And the longer they marinate in the fridge the better. Most importantly, don't fret over exact measurements for this recipe...I eyeball it, and it always comes out great.

4 meaty pork rib racks, cut into 3-5 bone sections (depending on cut)
1 whole fresh pineapple
1 1/2 cups brown sugar
2 (18 ounce) bottles barbecue sauce (I prefer Sweet Baby Rays)
1 dash liquid smoke
1 orange, zest of, with remaining orange cut into 1/4-inch slices
1 tablespoon chili powder
1 tablespoon garlic powder
salt and pepper

Steps:

  • wash the rough outside skin of the pineapple and slice off the bottom and leaves. Cut the skin off in 1/2"-3/4" slices. Set the remaining pineapple aside.
  • In a large stock pot (15 qt is best), add the pineapple skin slices, 1 cup brown sugar,2 cups BBQ sauce, the orange slices, dash of liquid smoke, and the rib sections.
  • Add enough water to the pot to cover the ribs completely, and bring to a boil. Reduce heat and simmer ribs for 40 minutes. Don't overcook them.
  • Remove ribs from pot and set aside to cool.
  • While ribs cool, make a rub from the orange zest, remaining brown sugar, chili powder, garlic powder, and salt and pepper to taste.
  • When ribs are cool enough to handle, apply rub to both sides of meat. Place ribs in a plastic freezer bag, and allow to marinate for 3 or 4 hours (or longer if you prefer).
  • After marinating time, add 1 cup of BBQ sauce to the bag and coat ribs. Allow them to come to room temperature in the bag.
  • In the mean time, slice the remaining pineapple into 1/2" thick rings and brush with BBQ sauce. I occasionally add a tsp of honey to the BBQ sauce for grilling --
  • Heat BBQ grill to 300 degrees. Place ribs on grill, and brush with BBQ sauce, turning frequently and basting with sauce, about 20 minutes, being careful not to let sauce burn. Reduce heat if necessary.
  • During the last 8 minutes of cooking, add the pineapple slices to the grill, turning once and allowing them to carmelize and brown with grill marks.
  • Remove ribs and pineapple to a serving platter and enjoy.
