5 links smoked chicken sausage (cut into 1.5" pieces)
2 cups bell peppers (red, green, yellow, and orange bell peppers, cut into 1.5" pieces)
½ red onion (cut into 1.5" pieces)
1/3 cup avocado oil
1 Tablespoon garlic powder
salt & pepper to taste (see Notes for additional seasoning options)
5 wooden skewers (10")
chopped parsley to garnish

Steps:

  • Soak the wooden skewers in a shallow dish to prevent burning on the grill
  • Meanwhile, add all the chopped peppers, onions, and smoked chicken sausage into a large bowl. Add the oil, garlic powder, salt & pepper, and any additional seasonings to the bowl and toss them to coat.
  • Thread the peppers, onions, and sausage with the skewer. Alternate each piece so that the sausage and vegetables are nicely arranged.
  • Heat and grease your grill or grill pan. Cook on each side until you get grill marks, about 3 - 5 minutes depending on how hot your grill is. For the broiler, lay them on a single layer and flip them when you see a nice char (about 2 - 3 minutes).

Steps:

  • Soak 10 wood skewers in water for 20 minutes. {this ensures that the skewers will not burn on the grill}
  • Assemble the kabobs, alternate the sausage with onions and peppers.
  • Heat grill to medium high heat and place kabob on grill.

1 pound boneless skinless chicken thighs, cut into 1-inch pieces
1/2 pound fully cooked smoked sausage, cut into 1/2-inch slices

1 tablespoon honey
1/2 teaspoon dried thyme leaves

  • Heat coals or gas grill for direct heat. Place potato wedges in microwavable dish. Add 2 tablespoons water. Cover and microwave on High about 4 minutes, stirring once, just until potatoes begin to soften; drain.

1 tablespoon water
2 pounds smoked turkey sausage
3 medium onions
1 medium green bell pepper
1 medium red bell pepper
1 medium yellow bell pepper
10 metal skewers
2 tablespoons olive oil, or as needed
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.

We've made this recipe so many times I can't even count anymore - often for company - and always to accolades. It seems like a lot of meat, but make it all. If you have company, it will be gone, and if you don't, you'll love the leftovers!

4 boneless skinless chicken breasts
1 1/2 lbs mild Italian sausage
1/2 cup olive oil
1/4 cup red wine vinegar
3 garlic cloves, minced
1 teaspoon Dijon mustard
1/2 teaspoon oregano (or use 1 tbsp. fresh oregano)
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Cut the chicken and sausage into thick pieces of roughly equal size and place in a large ziploc bag.
  • In a small bowl or measuring cup, whisk together the remaining ingredients for the marinade. Pour the marinade into the ziploc bag with the meat, seal and distribute so all of the meat is covered with marinade. Let sit for a minimum of two hours or up to eight.
  • When finished marinating, skewer the meat onto metal or wooden skewers, alternating two pieces of sausage, then two pieces of chicken.

8 cherry tomatoes
1 green pepper, seeded and cut into 8 pieces an
1 red onion, peeled and cut into 8 pieces
3/4 lb boneless skinless chicken breast, cut into 12 pieces
1 lb andouille sausage, cut into 12 thick slices
salt and pepper, to taste
creole seasoning, to taste
1/4 cup olive oil
3 tablespoons creole mustard
1 1/2 cups chicken stock
1/2 cup heavy cream
2 tablespoons butter

Steps:

  • Preheat grill to medium high or preheat broiler.
  • Brush oil on all vegies and meat, and season with salt, pepper and creole seasoning.
  • Use 4 metal skewers. For each skewer use, 2 tomatoes, 2 pieces green peppers, 2 pieces of onion, 3 pieces of chicken, 3 pieces of andouille sausage. Thread the pieces randomly.
  • For the sauce: In a saucepan combine the stock and mustard. Bring to a boil, reduce heat and gently boil for 2 minutes or until reduced to 1/2 cup.
  • While sauce is reducing, place the skewers on the grill. Cook for about 5 minutes on one side and then turn them over and cook for about another 5 minutes or until chicken is no longer pink inside.
  • When the sauce is reduced to 1/2 cup, add the cream. Bring to a gentle boil, and reduce for another 2 minutes. Now whisk in the butter. Season to taste with salt and pepper and remove from the heat.
  • Place kabobs on a serving platter and drizzle with the sauce.

1/4 cup reduced-sodium soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1/4 teaspoon pepper

1 pound fully cooked kielbasa or Polish sausage, cut into 3/4-inch slices
