1 pound skinless salmon
24 cherry tomatoes
1 cup lightly packed fresh basil
1/2 cup olive oil
1 clove garlic
Salt and pepper

Steps:

  • Heat grill to high. Cut swordfish and salmon into 24 cubes (about 1 1/2 inches each); thread against the grain on 8 skewers, alternating with tomatoes.
  • In a blender, puree basil, oil, and garlic until smooth. Season with salt and pepper. Reserve half.
  • Brush kabobs with half of basil oil; season with salt and pepper. Grill until fish is opaque, 6 to 10 minutes, turning occasionally. With a clean brush, coat kabobs with reserved basil oil. Serve immediately.

1 1/2 pounds cubed swordfish or salmon fillets (skin removed)
16 cherry tomatoes
1 small red onion, root attached, cut into 8 wedges
Extra-virgin olive oil
Coarse salt and ground pepper
3 medium zucchini, shaved into ribbons with a vegetable peeler
1 cup corn kernels (from 2 ears)
2 tablespoons fresh lemon juice
1/4 cup fresh mint leaves

Steps:

  • Heat a grill to high. Clean and lightly oil hot grill. Alternately thread fillets, tomatoes, and onion onto eight 8-inch skewers. Brush kebabs with olive oil; season with salt and pepper. Grill until fish is opaque throughout, 6 to 10 minutes, turning occasionally.

1 lb. swordfish steak, cut into bite-sized (1 1/2 to 2-inch) pieces
1/2 cup purchased sweet-and-sour sauce
2 medium zucchini, cut into 1/2-inch-thick slices
1 medium red bell pepper, cut into 1 1/2-inch pieces
15 to 20 cherry tomatoes
Additional sweet-and-sour sauce, if desired

Steps:

  • If using bamboo skewers, soak in water for 30 minutes.
  • Meanwhile, heat gas or charcoal grill. Place swordfish pieces in large bowl. Add 1/2 cup sweet-and-sour sauce; turn fish to coat all sides. Add zucchini, bell pepper and tomatoes; stir gently to coat.
  • Thread fish, zucchini, bell pepper and tomatoes evenly onto skewers.

1 pound skinless salmon fillet

4 thick slices country bread
1/2 cup extra-virgin olive oil, plus more for coating bread
1 cup packed fresh basil leaves
1 garlic clove
Coarse salt and freshly ground pepper

  • Heat grill to high (see page 367 for instructions); lightly oil grates. 24 cherry tomatoes (1-1 1/2-inch diameter)
4 garlic cloves, cut into slivers
1 tablespoon olive oil
1 teaspoon snipped fresh rosemary (1/4 tsp. dried)
1 teaspoon fresh parsley, chopped
1 teaspoon sugar
1/4 teaspoon salt

Steps:

  • Remove stems from tomatoes. With the tip of a sharp knife, pierce tomatoes. Carefully insert a sliver of garlic into each tomato.
  • Place tomatoes in the center of a 18x12 sheet of foil. Drizzle tomatoes with the olive oil; sprinkle with rosemary, parsley, sugar and salt. Bring the two long sides of the foil together and seal with a double fold. Fold remaining edges together to completely enclose tomatoes.
  • Grill tomatoes on the rack of a grill directly over coals or gas burners for 4 to 5 minutes or until heated through. Or bake in a preheated 350*F. oven for 4 to 5 minute or until heated through.
