1 canned chipotle chile in adobo sauce, chopped
1 teaspoon adobo sauce (from can of chipotle chiles)
1 teaspoon lime juice
2 tablespoons chopped fresh cilantro
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon garlic salt
1/2 teaspoon ground cumin
4 halibut steaks (6 oz each)

Steps:

  • Heat gas or charcoal grill. In small bowl, mix butter, chile, adobo sauce, lime juice and cilantro. Refrigerate until serving time.
  • In another small bowl, mix oil, chili powder, garlic salt and cumin. Brush both sides of each halibut steak with oil mixture.
  • Place halibut on grill over medium heat. Cover grill; cook 10 to 15 minutes, turning once or twice, until fish flakes easily with fork. Serve halibut topped with butter mixture.

2 tablespoons olive oil (preferably extra-virgin)
2 garlic cloves, crushed
1/2 teaspoon grated lemon peel
3 tablespoons thinly sliced fresh basil or 3 teaspoons dried
2 teaspoons drained capers
4 5- to 6-ounce halibut steaks (about 3/4 inch thick)

Steps:

  • Whisk lemon juice, olive oil, crushed garlic cloves and grated lemon peel in small bowl to blend. Stir in 2 tablespoons fresh basil and capers. Season vinaigrette to taste with salt and pepper. (Can be prepared 1 hour ahead. Let stand at room temperature.)

2 tablespoons canola oil
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, cut into pieces
1 small shallot, thinly sliced
Juice and 1 teaspoon zest from 1 orange, plus zest for garnish
Juice and 1 teaspoon zest from 1 lemon, plus zest for garnish

  • Heat a charcoal or gas grill to high.

1/2 cup dark rum
1 fresh pineapple, trimmed cored and sliced 1/2 thick (or use 2 - 15 oz cans sliced, drained pineapple)

1 lime, juice of
1/2 medium orange, juice of
1/2 medium orange, zest of
1/4 cup olive oil
1 green onion, sliced
