2 ¼ cups jicama sticks
3 slices bacon
2 tablespoons avocado oil, divided
salt to taste
⅔ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a sheet pan with parchment paper.
  • Bring a pot of salted water to a boil. Slice jicama sticks into quarters and add to the boiling water. Boil for 10 minutes.
  • At the same time, cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle. Reserve bacon grease. Remove jicama from the water and pat dry.

4 medium sweet potatoes
1/2 cup plus 2 tablespoons olive oil, divided
1/2 cup lime juice
1/2 cup minced fresh cilantro
1/4 cup honey
2 tablespoons white wine vinegar
2 garlic cloves, peeled
1 chipotle pepper in adobo sauce, seeded
1 medium jicama, peeled and julienned

Steps:

  • Place sweet potatoes in a Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook for 20-25 minutes or until almost tender. Drain; cool slightly., Place 1/2 cup oil, lime juice, cilantro, honey, vinegar, garlic and chipotle in a blender; cover and process until blended. jicama
olive oil
parmesan cheese
cajun seasoning (or any seasoning you like)
