Knockwurst can be boiled or steamed but is at its best when lightly grilled and served with good pretzels, yellow or Dijon mustard, and a pale ale; a "hobo pack" of cremini mushrooms and garlic, also cooked on the grill, makes the meal a feast.

CORNED BEEF AND KNOCKWURST SANDWICH

Corned Beef and Knockwurst Sandwich image

This corned beef and knockwurst sandwich recipe is an original from my hometown of Richmond, Virginia. Cooked on the griddle, it was created at Richmond's own NY Deli in the 1940's, and soon became a staple of diners and bars across the city. Crazy that it's still completely unknown anywhere else.

Provided by Brian Genest

Time 15m

Yield 1

Number Of Ingredients 6

1 knockwurst
2 teaspoons salted butter, or to taste
¼ pound deli sliced corned beef
2 slices rye bread
2 slices Swiss cheese
1 tablespoon spicy brown mustard

Steps:

  • Slice knockwurst into long slices.
  • Melt butter on a large griddle over medium heat. Throw corned beef onto the griddle and get it sizzling. Add knockwurst slices; cook 4 to 5 minutes.
  • Add bread, making sure it gets a good coat of butter and grease from the griddle. Cook for 1 minute, then flip. Place Swiss cheese on bread slices. Cover with a lid or pot to steam until cheese melts, about 1 minute.
  • Remove everything from the griddle and assemble sandwich. Place one slice of bread on a plate with the melted cheese facing up. Pile on corned beef, knockwurst slices, and mustard. Top with second slice of bread, cheese facing down. Eat hot.

Tips:

  • Choose the right knockwurst: You want to choose a knockwurst that is firm and plump, and preferably fresh. Avoid any that are slimy or discolored.
  • Prepare the grill: Preheat your grill to medium-high heat. If you are using a charcoal grill, you can also add a few chunks of wood for a smoky flavor.
  • Score the knockwurst: This will help the fat render out and allow the seasonings to penetrate the meat. Use a sharp knife to make shallow cuts around the circumference of the knockwurst.
  • Season the knockwurst: You can use a variety of seasonings to flavor your knockwurst, such as salt, pepper, garlic powder, onion powder, and paprika. Be sure to season the knockwurst generously, as the flavor will intensify when grilled.
  • Grill the knockwurst: Place the knockwurst on the grill and cook for 8-10 minutes per side, or until they are cooked through. You can check for doneness by inserting a meat thermometer into the center of the knockwurst. The internal temperature should reach 160 degrees Fahrenheit.
  • Serve the knockwurst: Once the knockwurst are cooked, you can serve them immediately. They can be served on a bun, with sauerkraut and mustard, or with your favorite sides.

Conclusion:

Knockwurst are a delicious and versatile sausage that can be enjoyed in a variety of ways. Whether you are grilling them, frying them, or baking them, there are endless possibilities for creating a delicious meal with knockwurst. So next time you are looking for a quick and easy meal, be sure to give knockwurst a try.
