Categories     Chicken     Citrus     Quick & Easy     Hot Pepper     Summer     Grill/Barbecue     Healthy     Shallot     Cilantro     Gourmet

Yield Makes 4 servings

Number Of Ingredients 15

3/4 cup loosely packed fresh cilantro sprigs
1/4 cup olive oil
2 shallots, chopped (1/2 cup)
1 large garlic clove, chopped
1 teaspoon finely grated fresh lemon zest
2 teaspoons fresh lemon juice
1 fresh serrano chile, minced, including seeds
1 teaspoon ground coriander
1 teaspoon sugar
3/4 teaspoon salt
1 (3- to 3 1/2-lb) chicken, rinsed and patted dry
1/4 teaspoon black pepper
1 tablespoon unsalted butter, melted and cooled
Special Equipment
kitchen string; a large chimney starter (if using charcoal); an instant-read thermometer

Steps:

  • Purée cilantro, oil, shallots, garlic, lemon zest and juice, chile, coriander, sugar, and 1/2 teaspoon salt in a food processor until it forms a paste. Leave any fat in opening of chicken cavity and sprinkle cavity with pepper and remaining 1/4 teaspoon salt. Starting at cavity end, gently slide an index finger between skin and flesh of breast and legs to loosen skin (be careful not to tear skin). Using a small spoon, slide cilantro purée under skin over breast and drumsticks, using your finger on outside of skin to push purée out of spoon and distribute evenly. Tie legs together with kitchen string and tuck wing tips under. Brush outside of chicken all over with butter.
  • Prepare grill for cooking over indirect heat with medium-hot charcoal (moderate heat for gas); see "Grilling Procedure< >."
  • To cook chicken using a charcoal grill: Lightly oil grill rack, then put chicken on rack with no coals directly underneath and cook, covered with lid, until thermometer inserted into fleshy part of thigh (do not touch bone) registers 170°F, 40 to 50 minutes. (Add more briquettes during grilling if necessary to maintain heat.) Transfer chicken to a platter and let stand 15 minutes.
  • To cook chicken using a gas grill: Lightly oil grill rack, then put chicken above shut-off burner. Grill, covered with lid, turning chicken 180 degrees halfway through cooking if using a 2-burner grill, until thermometer inserted into fleshy part of thigh (do not touch bone) registers 170°F, 35 to 45 minutes.

LEMONY CHICKEN WITH FRESH CORIANDER

Lemony Chicken With Fresh Coriander image

Provided by Jonathan Reynolds

Categories     main course

Time 1h

Yield 6 servings

Number Of Ingredients 12

2 1-inch cubes fresh ginger, peeled and coarsely chopped
6 tablespoons vegetable oil
3 pounds skinless chicken legs, drumstick and thigh separated
5 cloves garlic, very finely chopped
3 cups finely chopped coriander leaves
1 bird's-eye chili, very finely chopped
1/4 teaspoon cayenne pepper
2 teaspoons ground cumin
1 teaspoon ground coriander seeds
1/2 teaspoon ground turmeric
1 teaspoon salt, or to taste
2 tablespoons lemon juice

Steps:

  • Put the ginger and 1/4 cup water into a blender and blend into a paste. Set aside.
  • Place the oil in a wide, heavy, preferably nonstick pot over medium-high heat. When hot, add as many chicken pieces as fit in a single layer and brown on both sides. Remove them and continue until all the chicken is browned.
  • Add the garlic to the hot oil. As soon as it turns medium brown, turn down the heat to medium and pour in the ginger paste. Stir and fry for a minute. Add the fresh coriander, chili, cayenne, cumin, coriander seeds, turmeric and salt. Cook, stirring, for a minute. Add the chicken pieces as well as any juices that have accumulated. Add 2/3 cup water to the pot and the lemon juice. Stir and bring to a boil. Cover tightly, turn heat to low and cook for 15 minutes. Turn the chicken pieces over. Cover and cook for 10 to 15 minutes more, until chicken is cooked through.
  • Remove the chicken. If the sauce is too thin, boil some of the liquid away over a higher heat. Serve with basmati rice.

Tips:

  • Choose the right chicken: Use boneless, skinless chicken breasts or thighs for this recipe. Bone-in chicken will take longer to cook and may not cook evenly.
  • Marinate the chicken: Marinating the chicken in a mixture of lemon juice, olive oil, coriander, and spices helps to infuse it with flavor and keep it moist during cooking.
  • Use a hot grill: A hot grill will help to sear the chicken and give it a nice char. If your grill is not hot enough, the chicken will cook slowly and may not develop as much flavor.
  • Cook the chicken over indirect heat: Once the chicken is seared, move it to an indirect heat zone of the grill. This will help to prevent it from burning and allow it to cook through evenly.
  • Use a meat thermometer: The best way to tell if the chicken is cooked through is to use a meat thermometer. Insert the thermometer into the thickest part of the chicken breast or thigh and cook until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: Once the chicken is cooked, let it rest for a few minutes before serving. This will help the juices to redistribute and make the chicken more tender.

Conclusion:

Grilled Lemon Coriander Chicken is a flavorful and easy-to-make dish that is perfect for a summer cookout. The marinade infuses the chicken with flavor, and the grilling process gives it a nice char. Serve the chicken with your favorite sides, such as rice, vegetables, or salad.
