2 medium shallots, minced
1 tablespoon dried thyme leaves
3 tablespoons (packed) dark brown sugar
1/4 cup soy sauce
3 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar

GRILLED BALSAMIC-MARINATED LONDON BROIL WITH RED ONIONS

Grilled Balsamic-Marinated London Broil with Red Onions image

Categories     Beef     Onion     Marinate     Fourth of July     Low/No Sugar     Vinegar     Summer     Grill/Barbecue     Gourmet

Yield Makes 4 servings

Number Of Ingredients 7

4 garlic cloves, minced
1/4 cup balsamic vinegar
3 tablespoons olive oil
1 1/2 lb (1 1/4-inch-thick) top round London broil
3 small red onions (3/4 lb total)
Special Equipment
about 24 wooden picks; an instant-read thermometer

Steps:

  • Marinate steak and prepare onions:
  • Stir together garlic, 3 tablespoons vinegar, 1 1/2 tablespoons oil, 1 1/2 teaspoons salt, and 1/2 teaspoon black pepper and pour into a 1-quart sealable plastic bag.
  • Add steak to marinade, turning to coat, and marinate, chilled, turning bag occasionally, at least 4 hours.
  • Bring to room temperature, then remove steak from marinade and discard marinade.
  • Trim root ends of onions slightly, leaving them intact, then halve lengthwise and cut halves lengthwise into 3/4-inch-thick wedges. Insert 1 wooden pick horizontally through each wedge (to keep it intact while grilling). Whisk together remaining tablespoon vinegar and 1 1/2 tablespoons oil and salt and pepper to taste in a bowl and add onions, tossing gently to coat.
  • To cook steak using a charcoal grill:
  • Open vents on bottom of grill. Light a large chimney starter of charcoal (80 to 100 briquettes) and pour lit charcoal onto bottom rack, leaving about one quarter of bottom rack free of charcoal and banking remaining coals across rest of bottom rack so that coals are about 3 times higher on opposite side. Charcoal fire is medium-hot when you can hold your hand 5 inches above thickest layer of coals for 3 to 4 seconds. 3Sear steak on lightly oiled grill rack over thickest layer of coals, uncovered, 1 minute on each side, then move steak to area over fewer coals and grill, uncovered, turning occasionally and moving to coolest area of grill if browning too quickly, until thermometer inserted horizontally 2 inches into meat registers 120°F, 10 to 12 minutes. Transfer to a plate and let stand 10 minutes (steak will continue to cook, reaching medium-rare).
  • To cook steak using a gas grill:
  • Preheat all burners on high, covered, 10 minutes.
  • Sear steak on lightly oiled grill rack, uncovered, 1 minute on each side, then reduce heat to moderate. Grill steak, covered, turning occasionally, until thermometer inserted horizontally 2 inches into meat registers 120°F, 10 to 12 minutes. Transfer to a plate and let stand 10 minutes (steak will continue to cook, reaching medium-rare).
  • To grill onions by either method:
  • While steak is standing, grill onions (covered only if using a gas grill) over moderate heat, turning over once, until tender, about 6 minutes.
  • Serve onions with steak; cut steak crosswise into thin slices, holding knife at a 45-degree angle.

DELICIOUS GRILLED LONDON BROIL

Delicious Grilled London Broil image

I have made London Broil frequently in the past, sometimes from recipes, sometimes my own concoctions but the preparation has always involved a long marinade to help tenderize and flavorize the meat. I have used a myriad of different combinations; soy, garlic, balsamic, honey, brown sugar and ginger have all been employed and generally the results have been quite good. This recipe, from Cooks Illustrated, is quite different; no marinade, no special flavorings, just a sprinkle of salt, a good tight wrap, a sit in the refrigerator and a a shower of freshly ground pepper. Sound boring? Au contraire, mon ami! It brought rave reviews from the chief culinary consultant and I thought it definitely ranked as the best London Broil I've ever made.

Categories     Meat

Time 35m

Yield 6-8 serving(s)

Number Of Ingredients 4

2 teaspoons kosher salt
1 bottom round steak, 2 to 2 1/2 pounds and 1 1/2 inches thick
1 tablespoon vegetable oil
1/2 teaspoon fresh ground black pepper

Steps:

  • 1. Sprinkle both sides of steak evenly with salt; wrap tightly with plastic wrap and refrigerate for at least 3 hours (steak can be salted and refrigerated for up to 24 hours).
  • 2. Remove steak from refrigerator 1 hour before grilling.
  • 3. About 20 minutes before grilling, ignite grill, turn all burners to high, close cover, and heat until very hot, about 15 minutes. Scrape cooking grate clean with grill brush.
  • 4. Unwrap steak; insert 3 metal skewers lengthwise through center of steak, spacing skewers about 1 inch apart. This is optional but it will keep meet from curling up on the grill. Brush both sides of steak with oil and sprinkle liberally with pepper. Place steak on hottest part of grill. Grill, flipping steak every 4 minutes, until instant-read thermometer inserted into center of meat registers 120-130 degrees for rare to medium-rare, 16 to 20 minutes.
  • 5. Transfer steak to cutting board and let rest, tented with foil, about 10 minutes. Remove skewers. Holding thin slicing knife at 45-degree angle to meat, slice very thinly and serve.
  • Notes:.If you prefer your meat well-done this probably isn't the recipe for you. London broil tends to become tough and dry when cooked past medium rare.

GRILLED LONDON BROIL WITH CHIPOTLE CHILES

Grilled London Broil With Chipotle Chiles image

My mother always made London Broil with top round and flank steak was stuffed with bread and braised and just yuck! Grilling flank steaks allows it's beefy flavor to shine. This recipes is spicy and sweet.

Provided by threeovens

Categories     Meat

Time 1h15m

Yield 6-8 serving(s)

Number Of Ingredients 8

4 tablespoons chipotle chiles in adobo, minced
2 tablespoons honey
6 garlic cloves, finely chopped
4 tablespoons olive oil
1 (2 1/2 lb) flank steaks
2 teaspoons kosher salt
fresh cilantro, chopped for garnish
lime wedge, for serving

Steps:

  • In a bowl, whisk together the minced chipotles, honey and garlic; whisk in the oil.
  • Season the steak all over with salt, then massage in the chipotle mixture evenly over the entire steak; let marinate at least 1 hour at room temperature, or up to overnight, refrigerated (bring to room temperature before grilling).
  • Preheat grill; brush off any bits of garlic or chile from the meat and grill, covered, until the steak is a bit charred on the outside and done to your taste on the inside, 4 to 5 minutes per side for medium-rare.
  • Let meat rest for 5 minutes or so, before slicing across the grain.
  • Garnish with cilantro and serve with lime wedges.

Tips:

  • Choose a good cut of meat. London broil is a relatively tough cut of meat, so it's important to choose a good quality piece.
  • Tenderize the meat. Pounding the meat with a meat mallet or using a fork to poke holes in it will help to tenderize it and make it more flavorful.
  • Marinate the meat. Marinating the meat in a flavorful marinade will help to add flavor and moisture.
  • Cook the meat over high heat. Grilling the meat over high heat will help to seal in the juices and create a nice sear.
  • Let the meat rest. Letting the meat rest for a few minutes before slicing it will help to keep the juices in the meat.

Conclusion:

Grilled London broil is a delicious and easy-to-make meal. By following the tips above, you can ensure that your London broil is cooked to perfection and full of flavor.
