2 boneless skinless chicken breast halves
1 1/2-2 cups marsala wine
2 cloves garlic, chopped
1/2 teaspoon dried thyme
salt & pepper
1 tablespoon olive oil
1 tablespoon red wine vinegar
3 tablespoons fresh grated parmesan cheese
1/2 head romaine lettuce
1/4 large red onion, sliced thin
1/4 cup black olives, sliced

Steps:

  • Place chicken in a bowl with a lid, add marsala to cover.

4 boneless, skinless chicken breast halves
Extra-virgin olive oil, for brushing
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
1 cup marinara sauce, store-bought or homemade
4 slices fresh mozzarella
4 tablespoons grated Parmesan

Steps:

  • Preheat an outdoor grill to medium-high. Make sure the grates are clean so the chicken doesn't stick.
  • Arrange a chicken breast between two sheets of plastic wrap. On a work surface, using a meat mallet or small heavy pan, pound the chicken evenly until it is 1/4-inch (6 millimeters) thick. Remove the plastic wrap and transfer to a baking sheet; repeat with the remaining chicken breasts. Brush both sides of each chicken cutlet lightly with oil.
  • Combine the salt, pepper and garlic powder in a small bowl and sprinkle evenly over both sides of the chicken cutlets. Place the chicken cutlets on the grill and cover the grill. Cook for 3 to 4 minutes. Flip and spread a few tablespoons marinara sauce over each cutlet and top with a couple pieces of mozzarella and 1 tablespoon Parmesan. Cover the grill and cook until the cheese is melted and the chicken is cooked through, 3 to 4 minutes longer. Serve hot.

2 tablespoons olive oil, plus more for frying
1/2 cup grated yellow onion
4 cloves garlic, minced on a rasp grater, such as a Microplane
Kosher salt and freshly ground black pepper
1 pound ground chicken
1 tablespoon Worcestershire sauce
1/2 cup breadcrumbs
1/2 cup finely chopped parsley leaves
1 teaspoon dried oregano
1 large egg, lightly beaten
1/3 cup grated Parmesan
1/2 cup all-purpose flour
3 cups shitake or cremini mushrooms, sliced
1/2 cup Marsala wine
2 cups chicken stock
2 tablespoons unsalted butter
1/4 cup finely chopped parsley

Steps:

  • Place a small saute pan over medium-high heat. Add the olive oil followed by the onions and 2 of the minced garlic cloves with a pinch of salt. Cook, stirring occasionally until the onions are translucent, 5 minutes. Remove to a plate to cool slightly.
  • In the meantime, mix together the chicken, Worcestershire, breadcrumbs, parsley, oregano, egg and Parmesan in a large bowl. Season well with salt and pepper, then mix in the cooled onions and garlic. Scoop into 12 meatballs then set aside. This can be done a day ahead of time.

  • Heat a large cast-iron enamel skillet over medium-high heat and add a drizzle of olive oil. Remove the meatballs from the skillet and set aside.
  • To the same skillet, add the mushrooms and remaining 2 minced garlic cloves with a little more olive oil. Cook until the mushrooms soften and begin to crisp, 3 to 5 minutes, then season with salt and pepper. Add the marsala, scraping any brown bits off the bottom of the pan then add the chicken stock and the meatballs. Reduce the liquid by about half and allow the meatballs to cook through, 15 to 20 minutes, then stir in the butter and parsley. Serve.

Transfer the poultry with mushrooms, carrots and more shallots to a sheet pan, roast them and dinner is done. This Marsala marinade is generous and versatile: It's veal, pork and lamb-friendly. Set some aside before it touches the meat and you can even turn it into a salad-friendly vinaigrette.

3 tablespoons Dijon mustard, plus more to taste

10 ounces salad greens

  • Prepare the marinade: Finely chop 2 shallots. In a large bowl, stir the chopped shallots with 3 tablespoons mustard, the honey, 2 1/2 teaspoons salt and 1 teaspoon pepper. Whisk in the Marsala then 1/4 cup oil. Refrigerate 1/4 cup marinade to use for the vinaigrette.
