1 bag Tortilla chips
2 c. pizza sauce
3 c. shredded mozzarella
1 Green Bell Pepper, chopped
1 c. mini pepperoni
1/2 c. sliced black olives
1/2 c. freshly grated Parmesan
Chopped parsley, for garnish

Steps:

  • Preheat oven to 375°. Line a large baking sheet with foil.
  • On the prepared baking sheet, add about half of the chips. Drizzle about half the pizza sauce over the chips, then top with half of the mozzarella, half the pepperoni, bell pepper, black olives, and Parmesan . Repeat to make another layer with remaining ingredients.
  • Bake until the cheese is melted, about 15 minutes.
  • Garnish with parsley and serve immediately.

Nonstick cooking spray, for the foil
Half 13-ounce bag corn tortilla chips (about 6 ounces)
1 link cooked chorizo, quartered lengthwise then cut in to 1/2-inch pieces
6 ounces freshly grated Cheddar (about 2 cups)
6 ounces freshly grated Monterey jack cheese (about 2 cups)
1 cup refried beans
4 tablespoons chopped fresh cilantro leaves
4 tablespoons guacamole
4 tablespoons chopped pickled jalapenos
4 tablespoons salsa
4 tablespoons sour cream

Steps:

  • Prepare a grill for medium-low heat. Tear off 4 18-inch long pieces of heavy-duty foil and put them on a work surface, shiny-side up, with a long end of each piece closest to you. Spray evenly with cooking spray.
  • Pile a quarter of the chips on the left side of 1 piece of foil, sprinkle with a quarter of the chorizo, Cheddar and Monterey jack. Dollop with a quarter of the refried beans. Fold over the empty-side of foil and seal the edges to make a packet. Repeat with the remaining foil, chips, chorizo, Cheddar, Monterey jack and beans.
  • Place the packets on the grill and cook, covered, until the cheese is melted and the chips are hot, 12 to 15 minutes.
  • Remove the packets to a large platter. Careful of steam, open the packets and top each with 1 tablespoon of cilantro, guacamole, jalapenos, salsa and sour cream.

1# hamburger, cooked and drained
1pkg taco seasoning
3/4 c water
1 can ro-tel
1 can mexican corn with red peppers, drained
3-4 cups monterey jack cheese, shredded
1 tomato, chopped
1 sm can sliced black olives
sour cream and guacomole for topping
Colored tortilla chips

Steps:

  • Heat gas grill on low so as not to have a flame while cooking. Lightly spray pizza stone with any cooking spray. Cook hamburger, drain, add taco seasoning and water; cook until water is absorbed. Spread first layer of chips on lightly sprayed stone in a circular formation, then cover with corn, ro-tel, meat, cheese. Repeat this, making the nachos into a tower (large circle to small circle on top). Cover the last stack of chips with just cheese and place stone on the handled metal carrier that comes with the stone. Place on the grill at low heat..Takes about 20 minutes to heat through. Remove from heat, top with olives, sour cream, guacomole, and tomatoes. I set the stone the middle of the picnic table and we all dug in!!

1 (1.25 ounce) package taco seasoning mix
1 (12 inch) parbaked thin pizza crust
5 tablespoons queso dip
1 cup shredded aged Cheddar cheese
1 jalapeno pepper, seeded and minced
4 green onions, diced
4 tablespoons salsa
½ cup crushed tortilla chips
2 tablespoons sour cream, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Cook beef in a large skillet under no longer pink, about 5 minutes. Drain. Stir in seasoning mix until evenly combined.
  • Place pizza crust on a work surface. Spread queso dip evenly over the crust. Top with Cheddar cheese, cooked beef mixture, jalapeno, and green onions. Spoon salsa onto the pizza in random spots, making sure it's not mixed in with the other toppings. Sprinkle crushed tortilla chips on top.

Marinated and grilled chicken breast and a blend of Mexican cheese nachos topped with lime crema and cilantro. I created this dish to pair with Vermentino wine which is customarily served with seafood. The pair worked really well and I had many requests for the nacho recipe. I kind of just did it, so use this as a guideline and make it your own!

4 tablespoons tequila
4 tablespoons olive oil
1 lime, juiced
1 teaspoon chopped fresh cilantro
¼ teaspoon ground cumin, or more to taste
¼ teaspoon garlic powder, or more to taste
¼ teaspoon salt, or to taste
1 pinch cayenne pepper, or to taste
2 large skinless, boneless chicken breasts, thinly sliced into cutlets
1 cup sour cream
½ cup mayonnaise
2 each limes, zested
1 lime, juiced
1 splash heavy cream, or as needed
2 (13 ounce) packages restaurant-style tortilla chips
1 (8 ounce) package shredded pepper Jack cheese
1 (8 ounce) package shredded Mexican cheese blend
1 tablespoon chopped fresh cilantro, or to taste

Steps:

  • Whisk tequila, oil, lime juice, cilantro, cumin, garlic powder, salt, and cayenne for marinade together in a bowl. Place chicken slices into a plastic bag, add marinade, and refrigerate for 30 minutes.
  • Mix sour cream, mayonnaise, lime zest and juice, and enough heavy cream to make crema thin enough together in a bowl and refrigerate.
  • Remove chicken from the refrigerator and let come to room temperature for 10 minutes.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Preheat an outdoor grill for high heat and lightly oil the grate.
  • Cook chicken on the preheated grill until caramelized and no longer pink in the center, about 5 minutes on each side.
  • Lay tortilla chips out in a single layer over two cookie sheets. Mix pepper Jack and Mexican cheese together and sprinkle half of the mixture over the chips. Cut the grilled chicken into bite-sized pieces and distribute evenly over cheese. Top chicken with remaining cheese.

1/2 cup finely chopped red onions

1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Heat grill to medium-high heat.
