GRILLED VANILLA-GINGER PINEAPPLE

Grilled Vanilla-Ginger Pineapple image

Sherry Yard has a wonderful recipe in her first cookbook, "The Secrets of Baking," called Roasted Voodoo Vanilla Pineapple. She roasts her pineapple with the dried vanilla pods that you save after you've scraped out the seeds, and fresh ginger. She inserts the pods into the flesh of the pineapple, a great idea if you're roasting the pineapple for a long time. I decided to use vanilla extract instead of the pods, because during the relatively short time on the grill they infused only the section of the pineapple they had been stuck into. I add vanilla to the ginger syrup and baste the pineapple with this sweet and pungent mix. You could also simply drizzle the pineapple with honey.

Time 25m

Yield Serves 4

Number Of Ingredients 6

1 large ripe pineapple
1 teaspoon vanilla extract
1/4 cup ginger palm sugar syrup or honey
Pinch of cayenne
1 tablespoon grape seed oil or canola oil
Fresh mint for garnish

Steps:

  • Cut ends off pineapple. Quarter lengthwise, peel and core.
  • Prepare a hot or medium-hot grill. (If you are using the grill after cooking meat or fish, allow residue to burn off and scrape away with a spatula.) Stir together vanilla extract, ginger palm sugar syrup or honey, and cayenne.
  • Brush pineapple wedges lightly with butter or oil and place on grill. Cook for 6 to 8 minutes per side, basting with the syrup, until you see grill marks and the pineapple is lightly colored. Remove to a platter or to plates and brush on remaining syrup or honey. Garnish with fresh mint, and serve warm.

GRILLED PINEAPPLE TART WITH RASPBERRIES AND CHIPOTLE CREAM

Grilled Pineapple Tart with Raspberries and Chipotle Cream image

Categories     Dessert     Bake     Cream Cheese     Raspberry     Pineapple     Hot Pepper     Summer     Grill/Barbecue     Sour Cream     Jam or Jelly     Gourmet

Yield Makes 6 to 8 servings

Number Of Ingredients 18

For crust
3/4 stick (6 tablespoons) unsalted butter, melted, plus additional for greasing pan
Flour for dusting pan
1 3/4 cups graham cracker crumbs (from 12 crackers, each about 4 3/4 by 2 1/4 inches)
21/2 tablespoons granulated sugar
For filling
1/4 cup sour cream
2 1/2 tablespoons packed light brown sugar
1 1/2 teaspoons minced canned chipotle chiles in adobo
3/4 teaspoon finely grated fresh lime zest
6 oz cream cheese, softened
1 pineapple (labeled "extra sweet"), trimmed, peeled, and quartered lengthwise, leaving core intact
4 1/2 oz raspberries (1 cup)
For glaze
1/4 cup apple jelly
1 tablespoon water
Special Equipment
a 9- by 1-inch round tart pan with removable bottom; a small pastry brush

Steps:

  • Make crust:
  • Put oven rack in middle position and preheat oven to 350°F. Butter and flour tart pan, knocking out excess flour.
  • Stir together all crust ingredients in a bowl with a fork until combined well, then press mixture with your fingers and the back of a spoon evenly and firmly onto bottom and up side of tart pan.
  • Bake crust until a shade darker, 8 to 10 minutes, then transfer to a rack and cool to room temperature, about 30 minutes.
  • Make filling and grill pineapple:
  • While crust cools, whisk together sour cream, brown sugar, chiles, and zest in a small bowl until sugar is dissolved. Beat cream cheese in a bowl with an electric mixer until smooth, then add sour cream mixture and beat until combined well. Keep covered with plastic wrap until ready to use.
  • Prepare grill for cooking. If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is medium-hot when you can hold your hand 5 inches above rack for 3 to 4 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes, then reduce heat to moderately high.
  • While coals are lighting, put pineapple quarters on a cutting board, long cut sides down, and cut lengthwise into slices slightly less than 1/4 inch thick with an adjustable-blade slicer or a knife (use caution; peeled pineapple is extremely slippery). Grill pineapple in 2 batches, covered only if using a gas grill, on lightly oiled grill rack, turning over once with tongs, until tender, about 5 minutes total. (If pineapple sticks to rack, use a metal spatula to loosen before turning.) Transfer to a platter and cool to room temperature, about 15 minutes. Trim pineapple and discard core from slices.
  • Assemble tart:
  • Spread filling in tart shell, then press raspberries into cream. Gently push up bottom of pan to loosen pan bottom (with crust) from side of pan, then carefully lift out tart and transfer to a work surface. Gently insert a thin wide metal spatula between crust and pan bottom, then run spatula under crust to loosen from pan. Using spatula, slide tart shell carefully onto a serving platter. Arrange pineapple decoratively over cream.
  • Make glaze:
  • Melt jelly with water in a small saucepan over moderate heat, stirring until smooth, then brush glaze onto pineapple with pastry brush.

Tips:

  • Choose ripe pineapples: For the best flavor and texture, select pineapples that are fully ripe. Look for fruits that have a deep golden-yellow color and give a slightly sweet aroma.
  • Slice the pineapples evenly: To ensure even cooking, cut the pineapples into uniform slices of equal thickness. This will help them cook evenly and prevent some pieces from burning while others remain undercooked.
  • Marinate the pineapples: Marinating the pineapple slices in a mixture of olive oil, ginger, garlic, and lime juice helps infuse them with flavor and prevents them from drying out during grilling.
  • Grill the pineapples over medium heat: To achieve a perfect balance between caramelization and tenderness, grill the pineapples over medium heat. This will allow them to cook through without burning.
  • Flip the pineapples halfway through grilling: To ensure even cooking, flip the pineapple slices halfway through the grilling time. This will help them develop grill marks on both sides and prevent them from sticking to the grates.
  • Serve immediately: Grilled pineapple slices are best served immediately after cooking. They can be enjoyed on their own, as a side dish, or as part of a main course.

Conclusion:

Grilled pineapple slices with ginger cream are a delightful summer treat that combines the natural sweetness of pineapple with the warmth of ginger and the richness of cream. The marinade not only adds flavor but also helps keep the pineapple slices moist and tender during grilling. Whether served as an appetizer, side dish, or dessert, these grilled pineapple slices are sure to impress your taste buds and leave you craving more. So next time you fire up the grill, don't forget to throw on some pineapple slices and enjoy this simple yet delicious recipe.
