Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 12

6 portobello mushrooms (about 1 pound), stems and caps separated, halved if very large
2 garlic cloves, coarsely chopped (about 1 tablespoon)
2 tablespoons coarsely chopped fresh flat-leaf parsley
1 teaspoon coarsely chopped fresh thyme
1 1/2 teaspoons coarse salt
Freshly ground pepper, to taste
1/3 cup balsamic vinegar
1/4 cup plus 1 tablespoon extra-virgin olive oil, plus more for brushing
1/2 cup homemade or low-sodium store-bought chicken or vegetable stock
12 pieces set polenta (about 1/2 batch) Basic Polenta (Soft or Set), cut into 1-inch-thick rectangles or triangles
2 cups arugula (2 ounces)
8 ounces Parmigiano-Reggiano, shaved

Steps:

  • Toss portobellos with garlic, herbs, salt, pepper, vinegar, and 1/4 cup oil in a large bowl. Let stand at room temperature, tossing occasionally, for 1 hour.
  • Transfer portobellos to a plate. Pour marinade into a small saucepan, and bring to a boil. Reduce heat, and simmer 1 minute. Add stock. Raise heat, and bring to a boil. Reduce heat, and simmer until reduced by half, about 10 minutes. Stir in remaining tablespoon oil, and remove from heat.
  • Preheat grill to medium-high. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds.) Lightly brush top and bottom of polenta with oil, and place in center of grill. Cook, flipping once, until polenta is marked, crisp, and no longer sticks to grill, 6 to 8 minutes per side. Meanwhile, place portobellos on cooler part of grill, and cook, turning frequently to avoid burning, until tender, about 10 minutes.
  • Place arugula on a platter, and arrange polenta and portobellos on top. Drizzle about half the sauce over portobellos. Top with Parmigiano-Reggiano. Serve immediately with extra sauce on the side.

PORTABELLA MUSHROOMS WITH POLENTA AND BALSAMIC VINEGAR

Portabella Mushrooms With Polenta and Balsamic Vinegar image

My husband and I had an appetizer like this on our anniversary a couple of years ago at Table Rock Lake in the Ozarks. It was so yummy that I had to find a recipe to recreate it. I couldn't find the exact recipe so here is the modified version of a couple of recipes that I came up with.

Categories     Grains

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 12

2 teaspoons extra virgin olive oil
1 cup non-instant polenta or 1 cup cornmeal
4 cups boiling water
1 garlic clove, minced
1/4 cup chopped flat leaf parsley
1 teaspoon crumbled fresh thyme leaves or 1/4 teaspoon dried thyme
1 teaspoon finely chopped fresh rosemary or 1/4 teaspoon dried rosemary
salt & freshly ground black pepper, to taste
1/4 cup grated parmigiano-reggiano cheese
4 large portabella mushrooms, stems removed
nonstick cooking spray or oil
good quality balsamic vinegar

Steps:

  • Preheat oven to 350 degrees.
  • In deep, heavy pot, combine olive oil and polenta.
  • Cook over med-high heat, stirring, until polenta smells toasty, about 2 minutes.
  • Remove pot from heat.
  • Add boiling water carefully, as this will splatter if you add it too quickly.
  • Stir until the polenta is smooth.
  • Stir in garlic, parsley, thyme, rosemary, salt and pepper.
  • Bake polenta, uncovered 20 minutes.
  • Stir it well then bake for an additional 20 minutes, or until the polenta is creamy.
  • While polenta cooks, lightly spray the mushroom caps, sprinkle with salt and grill, underside (gills) down, on a very hot grill or in heavy cast iron pan, about 4 minutes per side or until tender.
  • Divide the polenta among 4 dinner-size plates.
  • Sprinkle each with a quarter of the cheese.
  • Top each serving of polenta with a sliced mushroom, fanning the pieces.
  • Drizzle balsamic vinegar over the mushroom and polenta.
  • Serve immediately.

Tips:

  • Choose the right polenta: Look for coarse-ground polenta that has been pre-cooked. This will help to ensure that the polenta cooks evenly and doesn't become mushy.
  • Use a well-seasoned grill: A well-seasoned grill will help to prevent the polenta from sticking and will also add a nice flavor to the dish.
  • Don't overcrowd the grill: Make sure to leave enough space between the polenta slices so that they can cook evenly.
  • Cook the polenta over medium heat: This will help to prevent the polenta from burning.
  • Flip the polenta slices carefully: Use a spatula to carefully flip the polenta slices so that they don't break apart.
  • Serve the polenta immediately: Polenta is best served hot off the grill. You can top it with your favorite toppings, such as butter, cheese, or sautéed vegetables.

Conclusion:

Grilled polenta is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be customized to your liking. With a little practice, you'll be able to make perfect grilled polenta every time.
