2 tablespoons butter
2 tablespoons pine nuts
1 cup couscous, uncooked
2 tablespoons dry white wine
1 (14 1/2 ounce) low sodium chicken broth
1 tablespoon lemon rind, grated
1 tablespoon lemon juice
1/2 teaspoon kosher salt, divided
1/4 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon ground fennel
1/2 teaspoon ground coriander
1/4 teaspoon sugar
4 (6 ounce) salmon fillets, skinless
cooking spray

Steps:

  • Preheat grill to medium-high heat.
  • Heat butter in a small saucepan over medium heat; cook 3 minutes or until browned. Add nuts; cook 1 minute, stirring occasionally. Add couscous; cook 1 minute, stirring occasionally. Add wine and broth; bring to a boil. Cover, remove from heat, and let stand 5 minutes. Fluff with a fork; stir in lemon rind and juice, 1/4 t salt, and black pepper.
  • Combine white pepper, ground fennel, coriander, sugar and 1/4 t salt in a small bowl. Coat salmon fillets with cooking spray. Sprinkle fillets with spice mixture. Place salmon on a grill rack coated with cooking spray. Grill over medium heat 4 minutes on each side or until desired degree of doneness.
  • Serve hot with couscous.

A simple soy sauce and brown sugar marinade, with hints of lemon and garlic, are the perfect salty-sweet complement to rich salmon fillets. Even my 9 year old loves this recipe!

1 ½ pounds salmon fillets
lemon pepper to taste
garlic powder to taste
salt to taste
⅓ cup soy sauce
⅓ cup brown sugar
⅓ cup water
¼ cup vegetable oil

Steps:

  • Season salmon fillets with lemon pepper, garlic powder, and salt.
  • In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
  • Preheat grill for medium heat.
  • Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

BROWN SUGAR GRILLED SALMON



Brown Sugar Grilled Salmon image

Part of our annual trek to the mountains is cooking out streamside. This year I decided to try salmon and found this recipe on another site. I scaled it back to feed 2 and marinated the fish for about 6 hours. It was spectacular. You can baste the fish while it's cooking if you wish, but not necessary. We used a grill basket and oiled it first to prevent sticking.

1 1/2 lbs salmon fillets
lemon pepper
salt
garlic powder
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil

Steps:

  • sprinkle fillets with salt, lemon pepper and garlic powder to taste.
  • Combine soy sauce, brown sugar, water and oil.
  • Marinate fish in soy mixture for 2 hours or more.
  • remove from marinade.
  • Grill for 7 minutes per side.
