¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon paprika
lemon pepper to taste
sea salt to taste
2 pounds sea bass
3 tablespoons butter
2 large cloves garlic, chopped
1 tablespoon chopped Italian flat leaf parsley
1 ½ tablespoons extra virgin olive oil

Steps:

  • Preheat grill for high heat.
  • In a small bowl, stir together the garlic powder, onion powder, paprika, lemon pepper, and sea salt. Sprinkle seasonings onto the fish.
  • In a small saucepan over medium heat, melt the butter with the garlic and parsley. Remove from heat when the butter has melted, and set aside.

4 tablespoons minced shallots
4 tablespoons fresh lemon juice
1 tablespoon white wine vinegar
1 cup whipping cream
2 teaspoons minced fresh thyme
1 1/2 cups diced seeded plum tomatoes
1/3 cup plus 1 tablespoon olive oil
2 tablespoons minced fresh basil
1 1/2 tablespoons minced fresh oregano
1 1/2 tablespoons minced fresh tarragon
4 6-ounce sea bass fillets

Steps:

  • Combine 2 tablespoons shallots, 2 tablespoons lemon juice and vinegar in heavy small saucepan. Boil until almost no liquid remains in saucepan, about 5 minutes. Add cream and thyme; simmer until reduced to sauce consistency, about 6 minutes. Season with salt and pepper. (Can be made 6 hours ahead. Cover; chill.)

4 tablespoons unsalted butter, melted
2 tablespoons dry white wine
1 1/2 tablespoons chopped fresh tarragon, plus more for topping

Vegetable oil, for brushing
4 skin-on striped bass fillets, preferably wild (about 8 ounces each)

Steps:

  • Preheat a grill to high. Toss the tomatoes with the melted butter, wine, tarragon, 1/2 teaspoon salt and a few grinds of pepper. Pile the tomatoes in the center of a 24-inch-long piece of foil. Gather the edges and crimp to seal and form a packet.

2 tablespoons chopped fresh thyme leaves
1 teaspoon black peppercorns, crushed finely
2 cloves garlic, minced

2 (8 ounce fillets) fresh sea bass
1/4 cup Cognac or brandy
1/3 cup fish stock
Salt and pepper
1 bunch asparagus, blanched and refreshed
Sundried Tomato-Chardonnay Sauce, recipe follows
2 basil buds, for garnish
1 tomato, peeled seeded and small diced (1 tomato concassed), for garnish
1/4 cup olive oil
2 tablespoons black peppercorns
2 tablespoons shallots
3 cups Chardonnay
1 fresh bay leaf
1 teaspoon fresh lemon juice
1 large sun-dried tomato, chopped
1/2 pound butter, cut into small cubes

  • In a flat plate, mix the basil, thyme, peppercorns, and garlic.

With a whisk, 3 to 4 cubes at a time, incorporate butter, making a beurre blanc sauce. Strain through chinois. Keep warm.

1 whole sea bass, about 2 1/4 pounds, gutted
Salt and freshly ground black pepper
1 large clove garlic, sliced
3 large sprigs fresh thyme or 3/4 teaspoon dried thyme
1 small onion, chopped fine
3 ripe plum tomatoes, chopped fine

Steps:

  • Preheat oven to 500 degrees. Spread two tablespoons of the oil in a shallow baking dish large enough to hold the fish.
  • Pat the fish dry on paper towels. Roll it in the oil in the dish to coat it on both sides. Season the fish inside and out with salt and pepper. Tuck a few slices of the garlic and two sprigs of the thyme in the cavity of the fish. If fresh thyme is unavailable, sprinkle in one-half teaspoon of the dried thyme.
  • Place the fish in the oven and roast uncovered about 25 minutes, until the flesh can be lifted from the bone with the point of a knife and has turned opaque. Transfer the fish to a serving platter.
  • Heat the remaining olive oil in a small saucepan until it is quite hot. Drop in the remaining garlic and remove from the heat. Add the onion, tomatoes and remaining thyme. Stir. Season sauce with salt and pepper.
  • Remove the skin from the top of the fish, lift off the top fillet and serve. Turn the fish over and remove the skin and the bottom fillet in the same manner. Spoon the warm sauce over each portion of the fish.
