Seared Scallops with Watermelon Three Ways, Castelfranco Radicchio, Dandelion Greens and Red Onions image

Provided by Anne Burrell

Categories     appetizer

Time 1h30m

Yield 4 servings

Number Of Ingredients 11

1 cup champagne vinegar
1 cup water
1 tablespoon sugar
Kosher salt
1 pound watermelon wedge
1 small head Castelfranco, cut into 1/2-inch-wide ribbons
1 cup dandelion greens, cut into 1/2-inch-wide ribbons
1/2 red onion, thinly sliced
1 watermelon radish, peeled and julienned
Extra-virgin olive oil, for cooking
8 large sea scallops

Steps:

  • To pickle the watermelon rind, combine the champagne vinegar, water, sugar and 1 tablespoon salt in a large bowl. Carefully remove the rind from the watermelon. Using a mandoline or sharp vegetable peeler, shave the rind into ribbons about 1/8-inch thick. Add the watermelon rind ribbons to the bowl and let stand at room temperature for at least 1 hour. Drain and reserve the pickling liquid.
  • Dice the watermelon flesh into 1/2-inch chunks and add to a large bowl. Add the Castelfranco, dandelion greens, red onions, pickled watermelon rinds and watermelon radish to the watermelon chunks and toss to combine. Add 2 tablespoons of the pickling liquid and a nice drizzle of oil into the salad and toss to combine. Season with salt.
  • Heat a large nonstick pan with some oil over medium-high heat until the oil shimmers. Pat the scallops nice and dry and sprinkle with salt. Sear on each side until golden brown, about 2 minutes. The scallops will be done when they are no longer translucent, but it's important not to overcook them. Remove them from the pan and allow to rest for 5 minutes.
  • To serve, slice the scallops in half lengthwise and nestle alongside the three-watermelon salad.

GRILLED SEAFOOD SALAD

Grilled Seafood Salad image

This seafood salad, sizzled on a grill (or in a grill pan or under the broiler), delivers lightly smoky swagger and, thanks to radicchio, a welcome edge of bitterness. A substantial salad, it can be a curtain raiser or part of a buffet for summer dinner at home. It might even be carried to a picnic. But it begs to be served a bit warm.

Categories     salads and dressings

Time 1h

Yield 6 servings

Number Of Ingredients 13

12 large shrimp, peeled
1/2 pound sea scallops, hard tendon removed
1/2 pound swordfish, skinless, in 1 1/2-inch chunks
2 small to medium calamari, cleaned
6 tablespoons extra-virgin olive oil
3 tablespoons sherry vinegar
Salt and ground black pepper
1 small head radicchio, quartered
2 slices sourdough bread from the center of a round loaf
3 scallions, trimmed and chopped
1 tablespoon capers in vinegar, drained
1 clove garlic, peeled
1 tablespoon minced flat-leaf parsley leaves

Steps:

  • Combine shrimp, scallops, swordfish and calamari in a bowl. Toss with 2 tablespoons oil and 1 tablespoon vinegar. Season with salt and pepper. Light the grill.
  • When hot, use either a grill pan or eight or more thin bamboo skewers, soaked, to cook the seafood. If using a grill pan, heat the pan and brush it with a little oil before adding the shrimp, scallops, calamari and swordfish. Or thread everything but the calamari on the skewers, using 2 skewers at a time so the food will be secure. Sear the seafood, turning it to cook both sides, about 3 minutes per side. Remove to a large cutting board as it finishes cooking. Sear the calamari directly on the grill or in the grill pan, about 2 minutes per side. Add to cutting board. Sear the radicchio quarters briefly, turning once, and toast the bread on the grill. Add to the cutting board.
  • Cut the shrimp in thirds, the scallops and swordfish in half, and slice the calamari thin. Pile in a bowl with the remaining olive oil, vinegar, the scallions and capers. Coarsely chop the grilled radicchio. Add to the bowl. Rub the toasted bread with the garlic, dice it and add it to the bowl. Toss, season with salt and pepper, fold in the parsley and serve warm.

Tips for Perfect Grilled Sea Scallops with Radicchio:

  • Choose High-Quality Sea Scallops: Opt for large, dry-packed sea scallops with a firm texture and a slightly sweet aroma. Avoid scallops that are wet or slimy.
  • Properly Clean the Sea Scallops: Remove the tough side muscle from each scallop, as it can be chewy. Rinse the scallops thoroughly under cold water and pat them dry with paper towels.
  • Seasoning and Marinade: Keep the seasoning simple to allow the natural flavor of the scallops to shine through. A sprinkle of salt and pepper is usually sufficient. If desired, you can marinate the scallops in a mixture of olive oil, lemon juice, and herbs for a few hours before grilling.
  • Preheat the Grill: Ensure your grill is preheated to a high temperature before cooking the scallops. This will help sear the scallops quickly and prevent them from sticking to the grates.
  • Quick and Precise Cooking: Sear the scallops for 2-3 minutes per side, or until they are just cooked through. Overcooking can make them tough and rubbery.
  • Rest Before Serving: Let the grilled scallops rest for a few minutes before serving. This will allow the juices to redistribute throughout the scallops, resulting in a more tender and flavorful bite.

Conclusion:

Grilled sea scallops with radicchio is a gourmet dish that combines the delicate sweetness of scallops with the slightly bitter and spicy flavor of radicchio. The quick cooking time and simple seasoning allow the natural flavors of the ingredients to shine through. By following the tips and instructions provided in this recipe, you can create a restaurant-quality meal in the comfort of your own home.
