GRILLED CHICKEN PASTA SALAD WITH ARTICHOKE HEARTS
Use canned artichoke hearts but make sure to rinse them thoroughly. I've also used this recipe with turkey sausage or pepperoni instead of the grilled chicken and both make fun substitutions. This travels well! If you want to cut down on oil, try subbing half chicken broth.

Tips:
- Choose the right vegetables: For the best results, choose vegetables that are firm and in season. Avoid vegetables that are bruised or damaged.
- Prepare the vegetables properly: Before grilling, cut the vegetables into uniform pieces so that they cook evenly. You can also marinate the vegetables in a mixture of olive oil, herbs, and spices to add flavor.
- Grill the vegetables over high heat: This will help to caramelize the vegetables and give them a smoky flavor. Be sure to keep an eye on the vegetables so that they don't burn.
- Use a variety of vegetables: Don't be afraid to experiment with different types of vegetables. Some good options include zucchini, eggplant, bell peppers, and mushrooms.
- Make a dressing: A simple dressing can help to bring all the flavors of the salad together. You can use a vinaigrette, a creamy dressing, or a pesto.
- Serve the salad warm or cold: Grilled squash and artichoke salad can be served warm or cold. If you're serving it warm, be sure to let it cool slightly before serving.
Conclusion:
Grilled squash and artichoke salad is a delicious and healthy dish that is perfect for a summer meal. It is easy to make and can be customized to your liking. With a variety of vegetables and a flavorful dressing, this salad is sure to be a hit at your next barbecue or potluck.
