An economical, yet tasty meal. Chicken thighs are flavored with pesto, grilled and then served on Italian bread. For the pesto, I use my favorite, Recipe #220704.

2 1/2 lbs chicken thighs (8 thighs)
1 cup pesto sauce (1/2 Basil Pesto)
salt & freshly ground black pepper
1 tablespoon olive oil
2 garlic cloves
1 loaf Italian bread, cut into 8 pieces on the diagonal

Steps:

  • Preheat the grill.
  • Loosen skin from thighs to form a pocket; stuff with pesto.
  • Season chicken with salt and pepper.
  • Grill the chicken, turning once, until cooked through, about 35 minutes.
  • Meanwhile, mash garlic with 1/8 teaspoon salt to form a paste; stir in 1 tablespoon olive oil and brush on bread slices.
  • Toast bread on grill.
  • Serve chicken on bread, garlic side up.

1 tablespoon vegetable oil
½ cup finely chopped celery
½ cup finely chopped onion
1 (6 ounce) can lump crabmeat, drained
2 tablespoons dry sherry
½ teaspoon poultry seasoning
¼ teaspoon ground black pepper
2 ½ cups white bread cubes
1 ½ tablespoons minced garlic
6 boneless chicken thighs, with skin
½ teaspoon garlic salt
½ teaspoon onion powder

Steps:

  • Heat vegetable oil in a large skillet over medium heat. Add the celery and onion; cook and stir until soft, about 5 minutes. Remove from heat, and season with poultry seasoning and pepper. Stir in the crabmeat, sherry, and bread cubes until everything is well blended.
