4 medium yellow squash (about 2 pounds total), sliced lengthwise 1/4 inch thick

1/4 cup balsamic vinegar
1/2 teaspoon dried oregano
Coarse salt and ground pepper

Steps:

  • Heat grill to medium. In a large bowl, gently toss zucchini, squash, oil, vinegar, and oregano; season with salt and pepper. Working in batches if necessary, lift vegetables from marinade, and grill, covered, turning once, until tender, 6 to 8 minutes. Reserve marinade. (To store, refrigerate vegetables and remaining marinade separately, up to 1 day.) Drizzle grilled vegetables with remaining marinade, and serve.

2 tablespoons white wine vinegar
2 tablespoons fresh lemon juice
1 tablespoon minced garlic
2 teaspoons chopped fresh thyme leaves
salt and black pepper
1/3 cup extra virgin olive oil
3 large zucchini
3 large yellow squash

Steps:

  • Whisk together the vinegar, lemon juice, garlic and thyme in a large bowl.
  • Season with salt and pepper and gradually whisk in the olive oil.
  • Slice both of the squash diagonally into 1/4" thick slices.
  • Spoon 3 tablespoons of the marinade into a small bowl, cover and set aside.
  • Add all the squash to the remaining marinade in the large bowl and toss to coat.
  • Transfer the mixture to a 13x9 glass baking dish, cover and marinate at room temperature for at least 3 hours.
  • Can also be refrigerated for up to one day to marinate.
  • Season squash with a little additional salt and pepper and grill on the barbecue or on an indoor grill pan until they are crisp tender and brown, turning occasionally for about 8 minutes.
  • Transfer squash to a serving platter and drizzle with the reserved 3 tablespoons of marinade.
  • Serve hot or at room temperature.

  • Prepare grill for indirect-heat cooking over medium-hot charcoal (high heat for gas).
  • Trim squash and/or zucchini and halve lengthwise, then toss with salt, pepper, and 2 tablespoons oil in a large bowl.
  • Oil grill rack, then grill vegetables directly over hottest part of coals, covered only if using a gas grill, turning over once, until grill marks appear, about 6 minutes total. 1/2 cup olive oil
1 tablespoon sliced garlic
1 tablespoon dried oregano
1/4 teaspoon crushed red pepper flakes

3 cups yellow squash, sliced lengthwise, seeds removed with a spoon, cut in half moons
1 tablespoon olive oil
Kosher salt and freshly cracked black pepper
3 1/3 tablespoons freshly squeezed lemon juice
1 tablespoon honey
2 teaspoons minced shallot
1/4 teaspoon Dijon mustard
5 tablespoons grapeseed oil (or a neutral oil, canola, etc.)
1 tablespoon olive oil
Kosher salt and freshly cracked black pepper
1 cup grilled summer corn kernels (removed from the cob)
1 cup sugar snap peas, trimmed, blanched and sliced in quarters
1/4 cup toasted sunflower seeds

Steps:

  • For the grilled shrimp marinade: Toss the shrimp in a large bowl with the olive oil, garlic, oregano, red pepper flakes and sprinkle with salt and pepper. Let marinate in the fridge for an hour.
  • Preheat half of a grill to medium-high heat, or around 350 degrees F.
  • For the squash: Toss the squash with the olive oil and some salt and pepper and place in a disposable aluminum foil pan. Place the pan over the indirect side of the grill and cook, covered, stirring once, until the squash is just tender, but not browned, 8 to 10 minutes. Set aside to cool.
  • Grill the shrimp over direct heat until just cooked through, 2 to 3 minutes per side, flipping once.
  • For the lemon vinaigrette: Whisk together the lemon juice, honey, shallots and Dijon in a large bowl. While whisking continuously, slowly drizzle in the grapeseed oil, then the olive oil, until emulsified. Season with salt and pepper.
  • To assemble the salad: Toss together the squash, corn, snap peas, sunflower seeds, Aleppo, half of the vinaigrette and season with salt and pepper. Taste and check for seasoning, adding more vinaigrette as desired. The salad can be kept cold until ready to serve. Before serving, gently fold in the basil and cilantro. Then plate with the shrimp arranged on top.

4 summer squash (1 1/2 to 2 pounds give or take)
1/4 cup olive oil
chopped fresh parsley
kosher salt (to taste)
fresh ground black pepper (to taste)

Steps:

  • Preheat the grill w/all burners on high for 10 minutes (lid down).
  • Wash the squash, pat down dry. Trim the tops and bottoms, then rub olive oil over them.
  • Once the gill is hot, turn off the center burner, turn the other burners to medium. Put the whole squash over the center burner, close the lid and cook until easily pierced with the tip of a sharp knife/fork. Depending on the size of the squash, this will take approximately 12-20 minutes.
  • Turn the squash as needed.
  • Transfer the squash to a cutting board, slice, then toss with the parsley, salt and pepper.

1/2 red onion, finely chopped

1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
8 skinless mahi mahi or striped bass fillets (about 6 ounces each)

Steps:

  • Quarter the zucchini lengthwise, then thinly slice with a knife or mandoline. Transfer to a colander set over a bowl and toss with 1/2 teaspoon salt. Let drain 15 minutes.
  • Combine the zucchini, tomatoes, red onion, jalapeno, lime juice and half of the cilantro in a bowl. Set aside 1 hour.
  • Preheat a grill to medium high. Mix the cumin and coriander in a small bowl. Brush the fish all over with olive oil, then rub with the spice mixture and season generously with salt and pepper.   • Prepare a grill for medium-high heat; lightly oil grate. Whisk garlic, vinegar, and 1/2 cup oil in small bowl to combine; set marinade aside.
  • Toss squash, onion, and bay leaves on a rimmed baking sheet with remaining 3 Tbsp. oil to coat; season generously with salt and black pepper.
  • Arrange squash and onion on grate. Grill squash, undisturbed, until grill marks appear, about 3 minutes. 1/4 cup onion (finely chopped)
1/4 cup celery (finely chopped)

  • Coat grill rack with nonstick cooking spray. Preheat grill to medium direct heat. Meanwhile, cut squash lengthwise into halves. Grilling is all about spending time with your company and enjoying the weather. So, when it comes to my food choices, I want fast and easy so there's more time to be had with my friends and family. This seasoning and cooking method can easily be adapted to just about any vegetable.

2 medium zucchini or yellow squash
3 Tbsp olive oil
1 Tbsp honey
2 tsp vinegar, preferably apple cider or red wine
1 tsp fresh thyme, removed from stems
2 pinch paprika
salt and pepper, to taste

  • 1. Note: I like to cut and season these before prepping the rest of my food to be grilled. That way, I don't have to worry about cross-contamination with meat. Plus, it gives the seasoning time to soak in a bit. I also make sure these are one of the last things I grill because they don't require a lot of heat, so if you're grilling on wood or charcoal they can go on as the fire is starting to die down. If you're grilling meat, you can put these on as soon as you take your meat off. By the time these are done, it should have allowed enough time for your meat to properly rest, which means everything is done at the same time!
  • 2. Rinse off squash and quarter lengthwise, place on a large plate skin side down
  • 3. Drizzle squash with olive oil, honey, and vinegar.
