8 romaine lettuce leaves
16 slices vine-ripened tomatoes

16 ounces sliced roasted turkey
16 frill picks, or plastic cocktail swords
Potato chips
Sweet pickles

Steps:

  • Toast the bread in a toaster, or under a broiler on both sides. Cut the lettuce leaves in half crosswise and form into 8 neat stacks.
  • To make a double-decker club: On a clean work surface, arrange 3 bread slices in a row. Spread 1 tablespoon mayonnaise over 1 side of each bread slice. Place a lettuce stack on top of the first bread slice, top with 2 tomato slices, and season with salt and pepper, to taste. Place 2 slices bacon over the tomatoes (broken to fit neatly if necessary) and top with 1/8 of the turkey (without letting any hang over the sides). Season the turkey with salt and pepper, to taste. Repeat with the second bread slice. Carefully place the second layered bread slice on top of the first layered bread, turkey side-up. Cover with the third bread slice, mayonnaise side-down.
  • Pin the sandwich's layers together by piercing them with 4 frill picks or cocktail swords through the top bread slice, in 4 places in a diamond-like pattern, all the way to the bottom bread slice. Repeat entire process with the remaining ingredients to form 3 more sandwiches.
  • Using a serrated knife cut each sandwich, diagonally, into 4 triangular pieces (each piece should be secured in the center with a pick or sword). Serve with potato chips and pickles.

6 jumbo hot dogs, butterflied
Unsalted butter, melted, for brushing
6 hoagie rolls (preferably poppy seed), halved lengthwise
Nonstick cooking spray
1/3 pound yellow Cheddar, sliced
1/3 pound provolone, sliced
1/3 pound genoa salami, thinly sliced
1/4 cup yellow mustard
1/2 head iceberg lettuce, thinly sliced
2 beefsteak tomatoes, sliced 1/4-inch-thick
Celery salt, for serving

Steps:

  • Heat grill to 450 degrees F.
  • Grill the hot dogs until nice and charred on both sides, 3 to 4 minutes per side. Butter the cut sides of the hoagie roll halves and grill, cut side-down, until charred, 1 to 2 minutes.
  • Using a skewer or the tip of a small paring knife, poke about 10 holes in the bottom of a TK pan. Spray the entire pan with nonstick cooking spray (this is an important step). Now, layer in this order: one-third each of the charred hot dogs, Cheddar, provolone and salami. Repeat the layers 2 more times, making sure to finish with a layer of salami. Make sure that every layer is a snug fit, like you would a lasagna.
  • Put the pan on the grill and close the lid. Grill until the cheese has melted, 8 to 10 minutes. Remove from the grill and let rest for about 5 minutes. Run a paring knife around the edge of the pan to loosen the loaf. Turn the pan out onto a cutting board, unveiling the hot dog loaf. Slice the loaf crosswise into 6 pieces, just as you would a meatloaf. To build your sandwich: start with your hot dog loaf on the bottom bun, then top with mustard, lettuce, tomato and a sprinkling of celery salt. Finish with the top bun.

6 thick slices bread (whole wheat stands up to the heft of this big sandwich)
1 large tomatoes, sliced crosswise into thin (1/4-inch)
4 slices sharp cheddar cheese
4 slices provolone cheese
6 -8 slices of crisp cooked bacon
4 slices American cheese

  • Heat a large skillet over medium heat. Butter two pieces of bread on one side, and place next to each other in the skillet. These are the foundation slices for two sandwiches. Place a slice of cheddar on each piece of bread in the skillet, and arrange tomato slices in a single layer on each.
